I need some recipe ideas for food and drink for my upcoming May wedding and for the several showers that i am having. Any ideas for simple and cheap food and drinks would be very helpful.

Wedding Soup

2 whole chickens (for soup)
24 cups water
24 cups chicken broth (Mixed with water)
3 bunches endive
3 bunches escarole
1 whole onion, diced
1 lb carrots, shredded
1 1/2 lbs meatballs (use your own recipe)
2 eggs
1/4 cup parsley
salt and pepper

Boil chickens in mixture of water and broth until fully cooked, Approximately 2 hours.
Remove chickens from pot.
Skim off excess chicken fat.
Clean meat off bones and place diced up chicken in broth mixture.
Wash and tear up Endive and Escerole and add to broth.
Add diced onion, Parsley and Carrots Cook on med low until endive and escarole are cooked down.
Drop in uncooked mini meatballs (these can be made in advance).
Bring back to boil and cook for another 30 minute.
In a mixing bowl place 2 eggs and beat.
With soup in a rolling boil SLOWLY stir in beaten egg (eggs should string through soup).
Reduce heat to low and simmer for 2 hours.
Salt and Pepper to taste.
Serve topped with fresh grated parmesan cheese.
This soup is even better the second day.


Wedding Punch

2 1/2 cups pineapple juice, chilled
1 pint lime sherbet or lemon sherbet or raspberry sherbet
1 pint vanilla ice cream
1 (12 ounce) bottle ginger ale or 7-Up soda

Combine pineapple juice, sherbet and 1/2 of ice cream.
Beat until smooth.
Add 7-up or ginger ale.
Spoon remaining ice cream into punch.
Serve immediately.


Wedding Dumplings

16 slices bread, torn into small pieces
4-5 large eggs, starting out with 4 (if too dry, add one more)
1/2-3/4 cup milk (starting out with 1/2cup, if too dry, add 1/4 c. more)
3-5 dashes salt
3-5 dashes nutmeg
vegetable oil (for deep frying)

In a large bowl, beat eggs.
Add milk, salt and nutmeg; stir thoroughly.
Add the torn bread; mix thoroughly.
Shape bread mixture into 6-7 medium sized balls.
Deep fry in hot vegetable oil at 375 degrees; until golden brown.
Place on paper toweling.
To cook the dumplings:
Place in a large pot of boiling water; cook for 20 minutes.
Remove and serve with a gravy of your choice.
To freeze the dumplings:
After they've been deep-fried; place on paper towels.
Cool to room temperature.
Freeze in (freezer-typed) ziploc bags; up to several months.
Thaw completely, before cooking in boiling water


Wedding Chicken

4 boneless skinless chicken breast halves, pounded 1/8 inch thin
4 slices prosciutto or other cured ham
4 slices swiss cheese
2 tablespoons olive oil
12 toothpicks
FOR THE SAUCE
2 tablespoons butter
1 cup sliced button mushrooms, very clean and white
2 cloves garlic, minced
1 small white onion, minced
1/2 cup cream
1/2 cup sour cream
2 tablespoons flour
1/2 teaspoon paprika
1/4 teaspoon nutmeg
salt and pepper
hot noodles or rice

Preheat oven to 400 degrees.
First, buy your chicken pre-pounded.
Pay the extra.
It is worth it.
If you decide to pound your own chicken, place the chicken breast smooth side facing you on a piece of plastic wrap.
Fold the sides of the SAME PIECE of plastic wrap around the chicken and pound with the smooth side of a meat mallet, a rolling pin or a cookbook.
If you use a separate piece of plastic wrap, you run the risk of tiny little chicken guts all over you and your kitchen.
Gross!
Stomping on it will not work.
Pound until 1/8" thin.
Place pounded chicken smooth side down on the cutting board.
Lay a piece of prosciutto on each piece of chicken.
Lay a piece of cheese on each piece of chicken.
Fold in the long sides of the chicken breast about 1/4" (just enough to keep the whole package together), then roll from the short end of the chicken breast like a cigar.
Hold packet together with toothpicks.
In a large saute pan, heat olive oil over medium heat until it sizzles, but is not smoking.
Place chicken packets in pan FOLDED SIDE DOWN.
Brown chicken packets on all sides evenly.
Remove from pan and place in a baking dish.
In the same pan, melt the butter over med-low heat.
Add onions and garlic and cook until soft.
Add mushrooms and cook until soft and slightly browned and tender.
Remove from heat.
In a small bowl, mix cream, sour cream, flour and spices.
Add to mushroom mixture in saute pan.
Return pan to low heat.
Stir over low heat until smooth and thick.
Pour sauce over chicken.
Put chicken and sauce into 400 degree oven and bake for 25 minutes, or until chicken is not longer pink (depending on how done it got during the browning stage).
Serve with wide egg noodles and extra sauce.

Horseradish

Simply blend some garlic with butter and cut up some veggies attach to a kabob stick and grill (indoor/ stove top grill is ok).

Turkey wraps
Tortillas
lettuce
Turkey
Cheese (any kind will do but I prefer swiss)
Cream cheese (onio & chive)

Spread cream cheese over 1 tortilla, then layer lettuce, turkey, & cheese then roll it up and slice diagnally.

Meat balls with several dipping sauces.
Veggies & ranch.
Chicken wings. Just marinate over night in louisianna Hot sauce and bake.
Tons & tons of ideas for finger foods. Check th internet. Key word is finger foods or dinner party appetizers

For my reception we had a bbq. We rented an area by a lake that had volleyball, horseshoe pit, swings for the kids, etc. Then we found someone who does pig roasts and picnics and had chicken, pulled pork, salad, veggies, etc. Everyone loved the food. Got a few coolers for beer, pop, water, and had a great time! Who can beat a June wedding reception where I could wear shorts and tennies instead on highheel shoes!

Try Sushi Food and Wine in your wedding food items. People really enjoy sushi food and wine especially in wedding functions.
