4 boneless skinless chicken breast halves
salt and pepper
1/2 cup Italian breadcrumbs
1 egg, beaten
4 teaspoons butter
2 cups spaghetti sauce
4 slices mozzarella cheese
1 teaspoon grated parmesan cheese
Pound chicken to flatten.
Salt and pepper to taste.
Dip chicken in egg; then in bread crumbs.
Fry in butter in hot skillet, turning and browning for 10 min or until chicken is done.
Remove from skillet.
To skillet add spaghetti sauce.
Heat thoroughly.
Add chicken.
Place slices of mozzarella on top of chicken.
Sprinkle with parmesan.
Cover and cook until cheese is melted.
Serve with a side of spaghetti.

1/4 cup parmesan cheese
1 egg
1/2 cup milk
1 tablespoon butter
2 tablespoons olive oil
more parmesan cheese, for sprinkling on top
4 ounces sliced mozzarella cheese (if you can get it, the soft fresh kind is best - it melts sooooo creamy)
your favorite marinara sauce or store bought spaghetti sauce
Pound the chicken breasts between two slices of plastic wrap until about 1/4" thick.
Season with salt and pepper.
Dredge chicken in flour and shake off excess.
Dip in egg/milk mixture, then in breadcrumb/Parmesan mixture.
Heat the butter and olive oil in a large deep skillet.
Brown the chicken breasts over medium heat until golden on each side (about 2-3 min per side).
Remove to a plate and keep warm.
Add the marinara sauce to the skillet.
Heat to boiling and simmer 10 minutes.
Add the chicken breasts to the sauce and sprinkle Parmesan over them.
Place a slice of mozzarella on each piece of chicken.
Cover and simmer about 8- 10 minutes or until the cheese has melted and the chicken is tender.
Serve with your favorite pasta- we like linguine.

Easy Chicken Parmesan
1 jar (26 oz.) spaghetti sauce
6 Tbsp. Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.)
1-1/2 cups Shredded Mozzarella Cheese
PREHEAT oven to 375°F. Pour sauce into 13x9-inch baking dish. Carefully stir in 4 Tbsp. (1/4 cup) of the Parmesan cheese. Add chicken; turn over to evenly coat both sides with sauce. Cover with foil.
BAKE 30 min. Uncover.
TOP with mozzarella cheese and remaining 2 Tbsp. Parmesan cheese; continue baking 5 min. or until chicken is cooked through and cheese is melted.
serves 6
If using larger chicken breasts, cut them lengthwise in half before placing in the baking dish to ensure that they get done in the 35-min. bake time.

CHICKEN PARMESAN
6 skinless & boneless chicken breasts, flattened into an oval shape
1/2 c. flour
2 eggs
1 c. dried bread crumbs
1 tsp. salt
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. paprika
1/2 c. onions, chopped
2 cloves of garlic, crushed
2 (8 oz.) cans tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
1/4 c. olive oil
2/3 c. Parmesan cheese
8 oz. sliced Mozzarella cheese
Put the flour in a bowl. Lightly beat the eggs in another bowl. In a third bowl, combine bread crumbs with salt, onion powder, garlic powder and paprika. Dip the chicken first into the flour, then into the eggs and then cover well with the seasoned crumbs. Refrigerate for at least 30 minutes. Saute the chopped onion and garlic; add tomato sauce, oregano and basil. Simmer for 20 minutes.
Heat olive oil in skillet and saute chicken until golden brown. Place them in a shallow baking dish. Pour sauce over chicken, spreading so they are lightly covered with the sauce. Top with Parmesan cheese and bake at 350 degrees for 30 minutes. Remove from oven and top with Mozzarella slices. Return to oven for another 10 minutes to melt Mozzarella cheese.

Oven baked Chicken Parm- (we actually just had this last night!)
2 chicken breasts, pounded to 1/2 inch thickness and then cut in half (4 pieces)
1 egg
1 cup of italian bread crumbs
1 cup of mozz cheese
1 jar of your fave spag sauce
1 box of your fave spag- we like wheat thin spag
Crack the egg in a bowl and whip it up with a fork to blend. Put the bread cumbs on a plate. Dip the chicken pieces in the egg, then coat the chicken on both sides with the crumbs. Place in a 9x13 pan lightly coated with cooking spray or a little bit of oil. Place the chicken in the pan and cook in the oven at 350 degrees for about 20 minutes. Take them out, pour a little bit of sauce on the chicken pieces and sprinkle as much cheese as you want on top. Heat the rest of the sauce up. Cook up the spag according to the directions on the box. Cook in oven again until the cheese has melted and toasts a little- about 15 minutes more.
Serve your chicken parm with a side of spag and sauce! Yum! Have some garlic toast on hand- and you've got a very filling meal!

Ingredients 1 cup plain breadcrumbs 2 tablespoons flour 1/4 cup kraft parmesan cheese 1 cup milk 6 slices chicken breasts, 1/2 inch thick (chicken tenders) vegetable oil (frying) 2 cups dry bow tie pasta 2 tablespoons butter 3 tablespoons olive oil 2 teaspoons crushed garlic 1/2 cup white wine (Chablis) 1/4 cup water 2 tablespoons flour 3/4 cup half-and-half 1/4 cup sour cream 1/2 teaspoon salt 1/8 teaspoon basil leaves 3/4 cup mild asiago cheese (finely grated) Garnish 4 broccoli florets (lightly steamed) 2 white mushrooms (quartered lightly steamed) 1/4 teaspoon crushed red pepper flakes Directions 1Prepare pasta according to package directions. 2Wash and drain chicken strips. 3Mix breadcrumbs, flour, and Parmesan cheese together. 4Place milk in dish for dipping. 5Dip chicken in breadcrumb mixture and then in milk and then back in breadcrumbs. 6Place in fry pan in which oil has been heated and fry at medium to medium low temperature until golden. 7Remove and drain chicken. 8In a saucepan on medium heat, melt butter, add olive oil. 9Whisk in flour until mixture is blended. 10Quickly add garlic, water, and 1/2 teaspoon of salt stir well. 11Add wine and blend. 12Immediately add half and half and sour cream stir. 13When mixture is smooth add grated cheese stir until melted. 14Finally sprinkle fresh basil in the sauce and stir lightly and remove from heat. 15Garnish: Place 2 cups pasta in individual a pasta dish. 16Spoon about 1/2- 3/4 cup sauce over pasta, add broccoli and mushrooms. 17Place Parmesan Chicken on pasta and sprinkle red crushed pepper and add grated Parmesan cheese if desired.
