I just re-read your Q. Actually you have an easier way.
Just take 1 cup of rice to 2 cups of water as ratio.
That will be easier.

16 ozs make a lb.

For water, I'd use some jar that has some marking.]

1 quart = 32 oz.
so, 3.5 quarts = 112 oz. = 14 cups
and, 7 quarts = 224 oz. = 28 cups
that is a lot of rice there!
if you want to reduce the amount youre making, just remember rice is always 1 part rice to two parts water.

i will tell you a secret say there is one gallon 4 quarts go in a gallon in each quart there is 2 pints and in each pint there is 2 cups
so that means each quart has 4 cups in it
