Oatmeal Whole Wheat Quick Bread

INGREDIENTS
1 cup rolled oats
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 tablespoons honey
1 tablespoon vegetable oil
1 cup milk

DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball and place on a lightly oiled baking sheet.
Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

Do you mean rolled Oats? In that case this is a recipe for 40-50 crackers

3 dl rolled oats (oatmeal)
1 dl melted butter, margarine or oil
1½ dl lukewarm milk
1½ dl sugar
1-2 tablespoons Baker´s Ammonia
3½-4 dl flour

Stir together oats, edible fat, milk and sugar.
Mix baker´s ammonia with flour and add flour until a dough forms.
Place dough in a cool place overnight.
Preheat oven to 250° C (480° F).
On a lightly floured surface, roll out dough thinly, a little at a time.
(You may need to add more flour)
Use an ordinary rolling pin at first and then a cross-hatched rolling pin. (If you don´t own a cross-hatched rolling pin, just prick the crackers with a fork)
Cut out crackers with a cookie cutter.
Arrange crackers on a baking sheet and bake one plate at a time in the middle of the oven for 5-7 minutes or until lightly brown.
Transfer crackers to a rack and cool completely.
Store in an airtight container.

Garbage Cookies
This is the regular chocolate chip recipe with different additions.
Cream 1/2 cup butter and add
1/4 cup plus 2 tablespoons white sugar
1/4 cup plus 2 tablespoons brown sugar
blend well together then add
1 egg
1 teaspoon vanilla and combine well
Stir together
1 cup plus 2 tablespoons flour
1/4 teaspoon baking soda
1/2 teaspoon salt
Add to batter and combine well.
Stir in by hand
1/2 cup white chocolate chips
1 cup oatmeal
1/2 cup coconut
1/2 cup broken pecans or walnuts

Drop onto buttered cookie sheets and bake for 10-12 minutes.

Refrigerator Cookies

INGREDIENTS
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 tablespoon grated orange zest
3 tablespoons molasses
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats
DIRECTIONS
In a large bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the orange zest, molasses and vanilla. Combine the flour, baking soda and salt; stir into the molasses mixture until well blended. Mix in oats.
Divide the dough into halves, and shape into long logs about 2 inches in diameter. Wrap in waxed paper, and refrigerate for at least 8 hours or overnight.
Preheat the oven to 350 degrees F (175 degrees C). Slice chilled dough into rounds about 1/4 inch thick. Place 2 inches apart onto ungreased cookie sheets.
Bake for 11 to 13 minutes in the preheated oven, until the bottoms are lightly browned. Cool on the baking pan for a minute before removing to wire racks to cool completely.

Oatmeal Cake With Broiled Icing

1 1/4 cups boiling water
1 cup rolled oats
1/2 cup butter or margarine
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 eggs slightly beaten
1 1/2 cups sifted flour
1 tsp soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
Broiled coconut icing (recipe below)
Pour boiling water over rolled oats, let stand 20 minutes. (makes 1 1/2 cups thick oatmeal) Cream together butter or margarine and sugars. Add eggs. Stir in oatmeal, then sifted dry ingredients. Bake in greased 9 x 13 pan at 350 deg. for 45 minutes or until done when tested with a toothpick. Spread with coconut icing; broil until frosting bubbles, taking care not to burn.

Broiled Coconut Icing:


6 Tbsp butter or margarine
1/2 cup brown sugar, packed
1/4 cup cream or evaporated milk
3/4 cup nuts, coarsely chopped
1 cup coconut
Combine all ingredients. Spread over spice, oatmeal or carrot cake. Broil until frosting bubbles and browns slightly, taking care not to burn.

~MEAT LOAF RECIPE TO DIE FOR~
2 Pounds lean ground beef
1 Cup rolled oats
1 Pkg.. brown gravy mix
1/4 Cup white onion, diced
1 Tsp. Worcestershire sauce, plus a dash
1 Lg. egg
1/2 Cup light brown sugar
1/2 Tsp. mustard
1/2 Cup ketchup
Mix ground beef, oats, gravy mix, onion, tsp. Worcestershire sauce, and egg well.
Place in large loaf pan.
Mix brown sugar, mustard, ketchup, and the dash of Worcestershire sauce and put on top of loaf.
Bake in 400 degree oven for 50 minutes uncovered.

You'll never eat any other meatloaf besides this one again.

BAKED OATMEAL

2 cups milk
2 teaspoons baking powder

PREPARATION:
Preheat oven to 375 degrees Farenheit.
Mix all ingredients together and pour into 13 x 9 inch buttered pan.

Bake at 375 degrees for 25 minutes.

The innkeeper also likes to add dried fruits and nuts and pour into small ramekins for baking and serving individually.

or Nutty fruit oatmeal
700ml/24½fl oz water
½ tsp ground cinnamon
¼ tsp salt
300g/10½oz rolled oats
1 apple, chopped
3 dates, pitted
2 tbsp sliced almonds
1 tbsp brown sugar
650ml/23fl oz skimmed milk

Method
1. Place the water, cinnamon and salt into a saucepan over a medium heat. Bring to the boil then add the oats. Reduce the heat to simmer for five minutes, stirring occasionally. Remove from the heat and leave to stand, covered, until thickened to your taste.
2. Divide the porridge into two bowls then top with apple pieces, dates, almonds and a sprinkling of brown sugar.
3. Add a splash of skimmed milk to each bowl and serve.


or Papaya and oatmeal muffins with griddled papaya
100g/3½oz oats
50g/1¾oz honey
½ papaya, peeled, de-seeded and chopped
1 tsp ground ginger
100g/3½oz unsalted butter, melted
1 tsp baking powder
50g/1¾oz self-raising flour
50g/1¾oz apricots, chopped
a few pumpkin seeds, toasted
icing sugar, to dust
For the papaya
½ papaya, peeled, de-seeded and cut into rings
icing sugar, to dust
sprig of mint, to serve

Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the oats in a food processor and blend.
3. Add the honey, papaya and ginger and blend together. Add the butter, baking powder and flour and pulse again to combine.
4. Grease a muffin tin and spoon the mixture into the tins. Top with the apricots and sprinkle the pumpkin seeds over.
5. Bake in the oven for 8-10 minutes, or until golden.
6. Coat the papaya in icing sugar. Heat a griddle pan and griddle the papaya for a few minutes on each side until caramelised.
7. Remove the muffins from the oven and turn out onto a plate. Dust with icing sugar and serve with the griddled papaya slices. Garnish with a mint sprig to serve.

or Herrings in oatmeal with bacon
4 x 225g/8oz herrings
100g/4oz oatmeal
25ml/1fl oz vegetable oil
4 rashers streaky bacon, cut into thin strips
salt and freshly ground black pepper
1 lemon, cut into wedges

Method
1. Fillet the herrings. Season and press with oatmeal until they are well covered.
2. Heat the oil in a frying pan and fry the streaky bacon until crisp. Remove from the pan and keep warm.
3. Fry the herrings in the same pan oil, flesh side first, until golden brown.
4. Sprinkle the fillets with the bacon. Serve with lemon wedges and some boiled potatoes with chopped parsley.
