Tired of the usual recipes.looking for something tasty and fun.I would truly appreciate any ideas!

Crockpot Garlic Brown Sugar Chicken

1 large chicken, cut into serving pieces
1 cup packed brown sugar
2/3 cup vinegar
1/4 cup Sprite or 7-Up soda
2-3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon pepper (regular black or cayenne)

Place chicken in crockpot.
Mix all remaining ingredients and pour over chicken.
Cook on low for 6-8 hours.
Serve over rice or noodles.
You can thicken the juices after cooking with a little cornstarch

Crockpot Taco Soup

1 (16 ounce) can pinto beans
1 can white beans or kidney beans
1 (11 ounce) can niblet corn
1 (11 ounce) can Rotel tomatoes & chilies
1 (28 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies
1 envelope taco seasoning mix
1 envelope hidden valley ranch dressing mix
1 lb shredded chickens, ground beef or any meat

Cook meat and drain.
Shred if needed.
Add all ingredients to crockpot.
DO NOT DRAIN CANS.
Stir.
Cook on high for 2 hours or low for 4 hours.
Keep on low until serving to keep hot.
Garnish with sour cream, shredded cheese, chopped green onions, or tortilla chips.

Drunken Garlic Crockpot Roast

2 1/2 lbs boneless beef chuck roast, trimmed of fat
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium onions, thinly sliced
24 cloves garlic, minced (about 4 tbsp.)
2 beef bouillon cubes
1/2 cup hot water
8 ounces lager beer
3 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
cornstarch (dissolved in water; for gravy)

In a large skillet, heat 1 tbsp. of the oil and brown roast on both sides, seasoning with salt and pepper; remove to a platter and keep warm.
Add the remaining tbsp of oil to the pan and add the onions, cook until they just start to wilt then add the garlic, them cook until the onions are tender, a few minutes more.
Add the bouillon cubes to the hot water and stir to dissolve; add that to the skillet along with the beer, brown sugar, mustard, and vinegar; stir to mix well.
Pour mixture into the bottom of the crockpot.
Place roast on top of liquid, cutting into pieces if it doesn't lay flat.
Set the crockpot on low and cook for 7-8 hours.
Remove meat from crockpot and pour liquid into a pan on the stove; heat to a boil, and mix a slurry out of the cornstarch and water; thicken pan liquid with slurry to make a gravy.
Serve gravy over meat or with potatoes or noodles

or

Crockpot Stacked Enchiladas

1 package corn tortillas or flour tortillas (whatever size fits in your crockpot)
1 1/2 lbs cooked ground beef or 3 cups shredded cooked chicken or shredded cooked pot roast
1 (20 ounce) can enchilada sauce
1 teaspoon cumin
1 1/2 cups light cream cheese
1 onion, chopped fine
2 cups shredded cheddar cheese or monterey jack pepper cheese

Brown your beef or cook the other meat you are using.
Mix cooked meat, cumin, cream cheese and onion together.
Spray inside of crockpot with nonstick spray, then pour a little enchilada sauce on the bottom.
Place one tortilla in the bottom of the pot.
Cover with some of the meat mixture.
Pour a little enchilada sauce on top of meat.
Sprinkle some cheese on top of sauce.
Add another tortilla and continue layering until you run out of meat mixture.
You should still have some cheese and sauce left.
Top with a tortilla, then pour remaining enchilada sauce over all.
Cook on HIGH for 4 hours.
When it's done, sprinkle remaining cheese on top, replace lid until cheese melts.
Cut into wedges with plastic spatula to serve

Here are two ways to make a nice pot roast.

Take your favorite barbeque sauce and dilute it half and half with water. Coarsely chop and onion and toss that over your roast, pour the sauce on. In a few hours you'll have the most tender, delicious roast. Works for beef or pork.

More complicated but very tasty:

boneless beef roast
3 cloves garlic minced
pepper
1 TBSP Dijon mustard
1 TBSP Balsamic vinegar
2 Beef Oxo cubes dissolved in 1/2 cup water (you want it strong because the juice of the beef will stay in the crock pot)
1 can of cream of mushroom soup
Dash of red wine (optional)

Rub the roast with the garlic and lots of pepper. Do not salt because the Oxo will be enough. Place in the crock pot.

Mix the rest of the ingredients together with a whisk to make it smooth and pour over the roast. Voila! In a few hours you will have a roast so tasty that it will rival a fancy restaurant.

Besides corned beef with small potatoes and carrots and cabbage, try rolling bacon and onions in strip steak then hold them together with a tooth pick. Put just a little water in just to keep it from scorching and leave it for about 6 hours. Don't forget the carrots. I have to many to list right now, also I have a delicious lemon chicken in a cream sauce that is so good, but the complete recipe is at home and I am at work.

Slow cooked Sausage and Sauerkraut

Rinse and drain 1 can of sauerkraut and place in bottom of crock pot. Chop small onion and place over kraut. Sprinkle this with about a Tbsp. of brown sugar. Place Smoked Sausage (cut into chunks) over this and pour 1/4 cup of apple juice over the whole thing. Cook on low for 5-6 hours. It is delicious!!!!!

My favorite never comes out exactly the same!
Stack in your crock pot:
potatoes, cleaned (skinned if you like) cut into wedges or other shape
carrots, ditto
onions, peeled and quartered
turnip, peeled and diced (optional)
2 or 3 stalks of celery, cut into 1 inch sticks
two to four ripe, skinned tomatoes, cut up or a can of whole tomatoes (again, optional)
Salt and pepper
Then, layer over the veggies one skinned, disjointed chicken, rubbed well with oil, salt, pepper, and garlic.
Pour in one cup white wine, one cup chicken stock. Cook all day.
When it is time to serve, remove chicken bones, connective tissues, and stir meat back into stew. Thicken if desired.
For beef stew, replace chicken parts with cubes of beef stew meat, browned first in olive oil and seasoned with salt, pepper, and thyme.
For more variety, leave out the potatoes, and cook rice or noodles to serve with the stew. Add more liquid to make soups, and different spices for more change-ups.

My ex used to make pork chops in the crock pot, and she'd throw in apples, onions, potatos and diet coke. Yes, diet coke. Not a lot, just enough to keep it liquid I guess. Those pork chops came out just awesome.
