ooo, depends on how I'm feeling.

Cheddars (sharp, mild, extra sharp, extra extra sharp) are all good, but I've had Swiss, Gouda, White Stilton, Blue Stilton, Red Leicester, American processed, Mozzarella, Cheshire, Double Gloucester, Edam, Colby, Monterey Jack, Emmental, Gruyère, grated Parmesan, grated Pecorino, grated Romano, Brie, Camembert, Roquefort, Gorgonzola, Munster, Appenzeller, Provolone...

Shropshire Blue, Blue Wensleydale, Oxford Blue, Lymeswold (which you can't get anymore), Caboc, Coverdale, Derby, Red Devil, Wensleydale, and Y Fenni.

Y Fenni is especially good, its a Welsh cheese made with mustard seed and ale.

They have all been good. Cheese... mmmmmm

I grill my steak burgers with mesquite wood and use a nice smoked cheddar. The smoke flavors are nice together. I have to be careful sometimes, Some smoked cheeses can be very strong. I usually ask to deli person for a taste to make sure.

I like American. It gives a nice cheese taste without overpowering the meat taste. I want to taste the meat, not cheese. Cheddar and blue cheese are too strong and all you taste is cheese. Why have meat, just have a cheese sandwich. American melts great and is not stringy. So, go American.

Ewww, don't ruin your steak with bleu, that would be awful!

I'd use swiss, melted and serve the burgers topped with some sautéed mushrooms and a bit of spicy BBQ sauce.

avocado or guacamole and some salsa is great on a burger. I've also had a bacon and egg burger it was off the hook
