Yes, I would.
It is too much work, being so limited like this. I have to work, study, work. barely any time for fun. Why live life it it is not fun or enjoyable?
At least if I knew everything, I could go on vacation when I wanted, I would never have to create other beings.
Life would be good. I could created and destroy whole worlds, just for fun, cause no-one would exist but me. I could do whatever I wanted with no-one to answer to. And it would not matter what I did because it would all be mine with no-one else to say I am wrong.
I could do anything, sleep as long as I wanted, no-one would complain.

No, the bible says only the gentle and the meed shall inherit the earth, So I want to be meek not omnipotent. People with power are corrupt and misuse the power.

I have much spiritual growth to do. I would not want to harm others with my power, or not do what is best for them, because I would not know what is best for them.

No. Knowing everything would drive me crazy. Especially about the bad things that will happen... like death, wars, etc. Even the good things. You couldn't live your life anymore. Mystery is needed in life.
