This is a Filipino dish that is sometimes euphemistically referred to as “Chocolate Stew" in order to trick squeamish foreigners into giving it a taste. However, the name literally means "That which has been bled on."

1 lb. pork, diced
2 tbsp. oil
2 cloves garlic, minced
1 onion, diced
1/4 lb. pork liver, diced
1/2 C vinegar
2 tbsp. patis (fish sauce)
1 tsp. salt
1 1/2 C broth
1 C frozen pig's blood (If you can't find frozen pig's blood, fresh blood is fine.)
2 tsp. sugar
3 chili peppers (long, green)
1/4 tsp. oregano

In a saucepan, cover pork with water and simmer for 30 minutes. Remove from broth and dice. Save 1 1/2 cups of broth.

In a 2-quart stainless steel or porcelain saucepan, heat oil and saute garlic and onions for a few minutes. Add pork liver, patis, and salt. Saute for 5 minutes. Add vinegar and bring to a boil without stirring.

Lower heat and simmer uncovered until most of the liquid has evaporated. Add broth. Simmer for 10 minutes. Stir in blood and sugar; cook until thick stirring occasionally to avoid curdling. Add hot chili peppers and oregano and cook 5 minutes more. Serve hot.

I actually made the best roasted pork tenderloin for Sunday dinner, I couldn't believe how great it was. What I do first is make little slits all over the meat. Then I mince about 3-4 cloves of fresh garlic, I slather the garlic on with the help of some olive oil. Then I use about 1 tbsp of smoke paprika, 1tbsp of cumin, 2tsp of grill seasoning and salt and pepper to taste. I then seared both sides of the roast for about two minutes each side. Just to get the sugars caramelized, then put in the oven at a preheated temp of 450. Roast for 30-35 minutes or until cooked through. I added potatoes to roast next to them. They were delish. I made sure to boil them first in salt water, until they are half way, that way they can finish cooking in the juices from the pork. I used the same seasonings on the potatoes as I did on the pork, just cut back so that they weren't salty. Trust me this was good, even my picky boyfriend has two servings and I ate it for lunch the next day!!
