They are a type of French bean, (haricot) instead of being picked and eaten green, they are allowed to stay on the plant until ripe. When the outer shell (the green fleshy bit you eat as green bean) has dried and crisp, the beans (seeds) are removed, dried completely and stored, or sent off to use for baked beans in tomato sauce.
You can buy dried haricot beans if you fancy having a go at making your own baked beans.

The Haricot or common bean is used in baked beans, it is a herbaceous plant, and grows annually.

It depends which variety you are asking about. Flattus Heinzicus is grown just outside the treacle mine in Knotty Ash. Long bamboo poles are lashed in rows to provide support for the fast growing crops. It is said that Flattus can expand at the speed of light if not confined by pieces of toast.
Other varieties such as Beanus Asdanus and Beanus Tescoanus are less cultivated for minority markets with a less discerning taste..
