I placed some lentils and brown rice into my crock pot last night and it turned out ok except my brown rice is a little mushy. Does anyone have a recipe they can share which will allow me to use a Crock Pot to cook this dish and it not turn out like mush? I added the brown rice about an hour after the beans. Left on low for about 6 hours. ** Small Note** An hour of that I turned it on high then reduced it to low.

Six hours seems to be a long time for rice, even in a slo-cooker. Suggest put in 1 1/2 hours before the end. You just need to experiment. Check the liquid when you put the rice in and top up if necessary.

Lovely Brown Rice and Lentils
3 servings 50 min 5 min prep

1 tablespoon olive oil
1 large onion, diced
1/2 green pepper, diced
1/2 cup brown rice, uncooked
1/2 cup lentils, uncooked
1 1/2 teaspoons cumin
1/2 teaspoon coriander
1/4 teaspoon turmeric
1/4 teaspoon hot sauce (or to taste)
2 cups vegetable broth

Saute onion with oil in medium saucepan until onion is translucent.
Add green pepper; saute for 3 minutes.
Add rice; saute 2 more minutes.
Add lentils, spices, hot sauce, and veggie broth. Cover and bring to boil; simmer 35-40 minutes, or until water is mostly absorbed.

Brown Rice and Lentils
4 servings 1¼ hours 25 min prep

2 tablespoons extra-virgin olive oil
1 small onion, chopped
4 cloves garlic, minced
1 carrot, finely chopped
2 teaspoons ground cumin
1 teaspoon ground coriander
1 1/2 cups uncooked brown rice
3/4 cup brown lentils or green lentils, rinsed
4 cups water
1 teaspoon salt
1 scallion, chopped
1/4 cup chopped fresh cilantro

In a big skillet, add olive oil and heat over medium-high heat.
Add in the onion, garlic, carrot, cumin, and coriander.
Saute, stirring frequently, for 3 minutes or until the onion is limp.
Add the rice and lentils; saute fo 2 minutes.
Add the water and salt; cover and bring to a boil.
Lower heat and simmer about 40 minutes or until the rice and lentils are tender.
Fluff mixture with a fork.
Stir in the scallion and cilantro.
Dry the skillet lid; place a crumpled paper towel over the rice, replace the lid and let stand for 5 minutes before serving.

Sweet and Sour Lentils over Brown Rice
6 servings
45 min 10 min prep
1 cup lentils
2 cups water
2 vegetable bouillon cubes
2 bay leaves
1 teaspoon salt
1/2 cup apple juice or pineapple juice
1/4 cup cider vinegar
1/4 cup brown sugar
2 cloves garlic, crushed
1/8 teaspoon ground cloves
1 medium sauteed onion

In a large pot combine lentils, water, bouillon cubes, bay and salt.
Bring to a boil and simmer 30 minutes.
Add remaining ingredients and cook until lentils are tender.
Remove bay leaves.
Serve over brown rice for a complete, delicious and healthy meal.
