Lately I've been practicing on how to make and decorate with rolled, white fondant. The recipe states that "clear vanilla extract" be used. I always use Madagascar Pure Vanilla Extract for baking and I'm confused! Is there such a thing as pure but clear vanilla extract?

clear vanilla is not pure it is a synthetic blend that they use for frosting and cakes or whatever pastry they would like to remain white.

If you're making fondant strictly for decorating, then don't bother searching for clear vanilla extract. It won't be eaten anyway, so flavor doesn't exactly matter too much. If you're making it so it can be consumed, then yes, having clear vanilla is a big deal. It's technically vanillin, an artificial chemical that gives vanilla its signature flavor and scent. It's not exactly clear, either, but its color is significantly less than that of regular vanilla.

I don't know if "clear vanilla extract" means "pure vanilla extract", but if it does, then it is good and most chefs use pur vanilla extract if they don't use vanilla beans. Avoid using imitation vanilla extract because they are simply extract from wood plus chemical.

No they are not the same, it depends on what you can afford

Vanilla beans are the very best thing to use if you can get hold of them then if you can afford them.

Second choice is Vanilla extract, and if that is not possible use imitation vanilla.

I won't lose sleep over this news. I don't like the taste of butter. Too bad I can't say the same for chocolate.
