First you have to put up some sheets of drywall. After you've covered the area you want to tile with drywall, you can lay the tiles like normal. If you're not sure go into Lowes or Home Depot. I'm SURE they can answer all of your questions.

I doubt you can tile successfully directly to the brick. Theoretically it can be done, but I don't know anyone who'd bother. You'd want to put some backerboard, or drywall, or SOMETHING flat (backerboard would be best) and tile onto THAT.
