Shriners wear fezzes for a very silly reason. In the 1860 a bunch of Masons wanted to have more fun. Because Masonic meeting are very formal and no drinking is allowed. So they started a group wear Masons could go to party and the charitable work would be focused on children.
One of the people organizing this group had just finished a trip around the world. And the most fun party he went to was put on by a Muslim man from the middle east. So he wanted to design his new group with the same decorations as they had at that party. That is it nothing deeper than that.

The Masons are not a religion! It is a fraternal order, not a religious one. There is a large conspiracy theory that travels with it due largely to the suspicious Church of old that didn't like being unable to exert control over the fraternity. Many famous and intelligent people have been members, some christian, some not, but the fraternity is not a religion.

It took me a few minutes to figure out why you were equating Masons with people who wear fezes, but I've got it now.
The people you're referring to are not Masons, they 're a fraternal order of American businessmen called Shriners. Shriners merely
wear the fez as part of the regalia of their organization. They have nothing to do with the Muslims who wear fezes.
Masons are never Catholic. They are typically Protestants, as were the U.S. President who were 32nd degree Masons, ie: Washington,Reagan, etc.
