Three causes come immediately to mind. Chronic dehydration, simply drink more fluids, is the simplest. There are two diseases to check for. Polycythemia vera is a increase of all the blood cells in the body. You didn't mention high white blood cell count or platelet count, so that is unlikely. The third is a genetic disease called hemachromatosis. The body processes iron too well, and the bone marrow makes as much blood as it has iron for. There is no cure, as we can't change genes. Treatment consists of medications that bind dietary iron so that it is no longer absorbed, reducation of iron in the diet by eliminating or reducing certain types of foods, and (believe it or not) removing blood. I work in a lab, and we have quite a few patients who come in to have a unit of blood taken from their body. The sad part of this is that we nor the American Red Cross can use their blood for transfusion.

Haemochromatosis is the most common cause of high haemaglobin - the body makes as much blood as it's got the iron for, and in haemochromatosis, the body has too much iron accumulated from dietary sources. It increases in incidence the further north and west you go in Europe (particularly high in Ireland).

It is treatable, the most common treatment is to take blood as often as necessary - when blood is taken, more blood is made to replace it, using the surplas iron in the process and reducing the body's stores to a more normal level.

Too much iron in the body is not a good thing - it tends to lodge in the organs and cause problems.

some people who are not getting enough oxygen will have more RBCs made in an attempt to transport more oxygen.

other problems--already addressed in the first response.
