I have read that you need to sift flour or other items. Why?

sifting removes lumps, concentration of flour substances that they do are difficult to mix onto

Sifting the flour air rates it and takes out the lumps and lets it mix in to the other ingredients
better it's very important to sift the flour for cakes but you need to remember to measure the flour before you sift it or you will have different volumes .there is some difference in
the volume of sifted flour and un sifted flour.
Some recipes might call for xx no. cups of sifted flour in that case you would measure
after sifting. if the recipe calls for xx no. cups
flour sifted you would sift it after measuring.
I used to write recipes on frozen pie crust labels
and I had a hard time pounding that into my head. Happy baking

To make sure there are no lumps in it or foreign objects in it, plus it fluffs it up which helps a little when mixing to add volume.

It is to make all the particles separate and not cause lumps. It also adds air to the mixture.
