One time I bought a guy and his friend a drink at a club - we became good friends and 'til this day he will tell me I'm the only girl that has ever bought him a drink.

He may have been secretly sizing you up and liked what he saw. He got embarrassed because he was secretly interested and he felt like he was caught with a naughty thought.
