The first poster is correct...it *IS* chocolate cake, but not a true dark, rich chocolate-y chocolate cake. Red Velvet has a very dense, spongy moist texture brought on by buttermilk and a little bit of vinegar (to mix with the baking soda) that gives it a slightly different texture than most cakes. The taste is a unique taste--and exceedingly yummy. I had some myself this afternoon (I made it for V-Day dinner and brought the leftovers to work).

A true Red Velvet Cake is as close as you can get to a genuine chocolate Cake. Cocoa is a must. If you make it soon, let me know....Great Choice !

It provides the flavor, as well as helps develop the deep dark red color. Otherwise, it would be a white cake flavored, bright red cake.
