In Europe, we open the can, drain, dump on a plate. Then you pour about 1 Tbl of olive oil, 1 Tbl of red-wine vinegar, and Salt/Pepper over the tuna. Eat with crackers, bread, pita, etc.
It's tasty, and very good for you.

Healthy Tuna Melts:
20 min 15 min prep
4 servings
1/3 cup celery, chopped
3 tablespoons light mayonnaise
2 tablespoons Dijon mustard
2 teaspoons lime juice
1/2 teaspoon fresh coarse ground black pepper
1 (12 ounce) can tuna in water, drained
4 English muffins, split and toasted
1 tomato, cut into 8 slices
2 ounces low-fat swiss cheese, shredded (about 1/2 cup)
1. Preheat broiler.
2. Combine first 6 ingredients and spread 3 tablespoons of the mixture on each muffin half.
3. Top each half with 1 tomato slice and 1 tablespoon cheese.
4. Broil 5 minutes or until the cheese is melted.

In medium bowl combine:
5oz cooked and chilled pasta
1small can drained tuna or salmon
1/2 cup of each thinly sliced carrots and celery
1/3c sliced black olives
1/4c each chopped green onions and red or green bell pepper
2T grated parmesan cheese

hm i'm not sure if this qualifies as 'simple' but its so good...
1/2 lb penne (or your pasta of choice)
4 cloves garlic, minced
1 lemon, for juice and zest
1/4 cup packed fresh basil leaves
1 (6 ounce) can tuna in olive oil, not drained (or 6-ounces tuna in water, plus approximately 1/4 cup of extra virgin olive oil of your choice)
tomatoes, chopped
2 scallions, chopped
parmesan cheese, grated or shredded (optional)
Cook pasta
While the pasta cooks, finely grate enough lemon zest to measure 1 tablespoon and squeeze 1 teaspoon juice (or more, to taste) Mince garlic.
Cut basil into thin strips.
Chop scallions and tomatoes.
Toast and chop nuts.
In a large bowl toss together all ingredients except for pasta.
Check and correct seasoning, lemon juice, and amount of olive oil.
When pasta is done, add it to bowl and toss with combined ingredients.

Tuna Waldorf Salad
Serving Size : 6
2 Cans (6-oz.) Tuna, drained and chunked
2 Tbsp. Lemon juice
1/3 cup Raisins
1/2 cup Mayonnaise
1/4 tsp. Ground cinnamon
3 Apples, medium, cored, and cubed
1 cup Celery, chopped
1/3 cup Walnuts or pecans, chopped
1/4 cup Milk
To taste Sugar (optional)
In a large bowl, toss together apples and lemon juice. Add celery, raisins, walnuts, and tuna; toss gently. In a medium bowl, combine mayonnaise, milk, and cinnamon; blend well. For a sweeter dressing, add sugar. Pour dressing over apple-tuna mixture; toss gently to coat.

Tuna Cakes
Serving Size : 2
1 can (6 ounces) tuna
1 egg
1 tablespoons mayonnaise
1 tablespoon breadcrumbs
Salt and pepper
1 teaspoon grainy mustard
1/4 cup olive oil, plus some to coat pan
Juice of 1/2 lemon
1 romaine heart, cleaned
2 small tomatoes, sliced
Drain liquid from tuna. In small bowl, mix tuna and egg together and season to taste. Add mayonnaise and breadcrumbs and mix together. Form tuna mix into two small cakes and set aside.
Make dressing by mixing mustard, olive oil and lemon juice and season to taste.
Add olive oil to a small frying pan and place tuna cakes in pan over medium heat. Cook to golden brown on both sides. Dress romaine with mustard dressing. Place tomatoes on plate, put romaine on tomatoes and the tuna cake on top. Drizzle with remaining dressing.
