This is a handy-dandy Stove Top Chicken "Casserole" that we love. It's a bit rich, but really yummy.
(4) boneless, skinless chicken breasts
(1) can cream of mushroom soup
(1) can sliced mushrooms (not completely necessary)
1/3 - 1/2 cup sour cream
Salt & Pepper to taste
(1) box Chicken Stove Top Stuffing - prepared per pkg. directions
** Preheat oven to 400 degree.
** Grease baking dish, place chicken in bottom of dish and season w/ salt & pepper.
** In separate bowl, mix togther the mushrooms, soup and sour cream.
** Spread on top of chicken breasts.
** Top everything with the prepared stuffing mix.
** Bake for 30 minutes or until cooked all the way through.
Enjoy!!

PASTA PRIMAVERA
1/2 Cup Ricotta cheese
1 cup vegetable broth
1 Tblspn Unsalted butter
1/2 Tspn salt
1/2 Tspn pepper
6 Asparagus Spears cut into 1 1/2 inch spears
1 Cup Diced Zucchini
1 Cup Diced Yellow Squash
10 oz Peas & Carrots
1/2 Pint Grape Tomatoes
1 Lb Fettuccine
1/3 Cup Parmesan Cheese
1/4 Cup Pine nuts(OPTIONAL)
Basil to Garnish
In a Large Pot bring salted water to a boil.
With a blender or food processor puree the Ricotta,Broth,Butter, and Salt and Pepper.
Put the mixture into a heatproof bowl.
Add Zucchini,Squash,Peas,and Carrots to the pot. While Veggies cook,Place the heat proof bowl on top of the pot of water to warm the sauce.
Remove with a slotted spoon.
Add some pasta to the boiling water and cook for 3 minuets;Drain;Toss with Veggies,Sauce, and tomatoes.
Top with Pine nuts,Parmesan and Basil
Serve immediately!! YUMMY!!!!

Easy Chicken Pasta Salad
Pasta Salad
3-4 Eggs, boiled and sliced
1 Cup Celery, chopped
¼ Cup Green Onions, chopped
2 Cups Chicken Breast, diced
Mayonnaise
Dijon Mustard
Salt and Pepper to taste
Spiral or Penne Pasta, cooked (1# bag ?)
Boil and slice 3 to 4 eggs. Cook pasta and drain. Have the celery, green onions and chicken prepared in a large bowl. Blend 1 tablespoon of mayonnaise to 1 teaspoon of Dijon Mustard. (I usually use two to three heaping tablespoons of mayonnaise to two to three heaping tablespoons of mustard. Use enough that it isn’t too dry.) Add salt and pepper to taste and blend. Add the pasta and stir well to combine.
This is quick and easy. Add, reduce or delete as desired. I don’t use the chicken and add more celery. My family loves this warm and as cold leftovers. The only problem is that there are rarely leftovers!! As far as the mustard, I especially like Westbrae Natural (Dijon Style Mustard). It comes in an 8 oz. Jar. This is another one of those recipes that I usually have all the ingredients handy and is so fast to prepare.

Italian Pasta Salad
2 cups of chopped Ham slices (the kind you buy for sandwiches)
1 pound of macaroni noodles
1 bag of frozen mixed vegetables
About a cup of Italian dressing
Salt and Pepper to taste
Make the pasta according to package directions. Heat mixed vegetables. Mix all the ingredients together, let it cool, and enjoy!

2 chicken breasts
combine first 5 ingredients in a pot and cook on med low until simmering, meanwhile prepare pasta as directed, and grill up the chicken. then combine pasta and sauce, then put the chicken over it! my whole family loves this dish

This is quick and really good.
Cook up some chicken breasts. You could do it teriyaki style. Fry up some frozen veggies, and cook some minute rice. Add them all together and voila!
It's also good with a bit of plum sauce on it.

S&P to taste
What to do:

well? what do you have in your fridge? OR, run to the store. We love to treat ourselves with a little filet with salt pepper and a small pat of butter and (since we live in a city we don't have a grill) toss it in the grill pan to sear...toss some bagged baby spinach with garlic, olive oil and lemon over medium heat and some baked potatoes, and voila! yum.
