If I'm right, I understand that it is a dessert staple in the south, but I don't live in the south and don't know much about it nor do I have a good recipe for it. If someone has a great recipe I would be ever so grateful if you would share it. If anyone knows the characteristics of a good red velvet cake (ie tenderness, flavor, texture, mouthfeel, etc) I would appreciate that input as well. My daughters Bday is Valentine's Day but we're celebrating it this weekend & I want to do a heart shaped red cake. Red velvet was the first thing that came to mind. It is chocolate flavored right?

Red Velvet Cake:

1/2 cup butter or margarine, softened
1 1/2 cups sugar
1 tablespoon white vinegar
1 teaspoon vanilla extract
3 large eggs
1 (1 ounce) bottle liquid red food coloring
2 1/2 cups all-purpose flour
2 tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk

Cream Cheese Frosting
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 (16 ounce) package powdered sugar
1 1/2 teaspoons vanilla extract
1 cup chopped pecans (optional)

1. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, vinegar, and vanilla, beating well.
2. Add eggs, 1 at a time, beating until blended after each addition.
3. Add food coloring, beating until combined.
4. Combine flour, and next 3 ingredients; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture.
5. Beat at low speed until blended after each addition.
6. Pour into 2 greased and floured 9-inch cakepans.
7. Bake at 350 degrees for 20-22 minutes or until a wooden pick inserted in center comes out clean.
8. Cool in pans on wire racks for 5 minutes; remove from pans and cool on wire racks.
9. Spread Cream Cheese Frosting between layers and on top and sides of cake.
10. Cream Cheese Frosting: beat cream cheese and butter until creamy; gradually add sugar and vanilla, beating well.
11. Stir in pecans if desired.

this is the one you gotta make, it's the best of the best.-enjoy!
ingredients-
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 ounces red food coloring
2 tablespoons cocoa (heaping)
1 cup buttermilk
2 1/4 cups cake flour
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon vinegar

and the frosting-
3 tablespoons flour
1 cup milk
1 cup sugar
1 teaspoon vanilla
1 cup butter (must be butter)

Directions-
Cream shortening, sugar and eggs.
Make a paste of food coloring and cocoa.
Add to creamed mixture.
Add buttermilk alternating with flour and salt.
Add vanilla.
Add soda to vinegar, and blend in.
Pour into 3 or 4 greased and floured 8" cake pans.
Bake at 350 F.
for 24-30 minutes.
Split layers fill and frost with the following frosting.
Frosting: Add milk to flour slowly, avoiding lumps.
Cook flour and milk until very thick, stirring constantly.
Cool completely.
Cream sugar, butter and vanilla until fluffy.
Add to cooked mixture.
Beat, high speed, until very fluffy.
Looks and tastes like whipped cream.

Red Velvet Cake is an old recipe. The one shared by "think pink"
sounds real good. The original cake was iced with a cooked icing
made with flour. You also can get red velvet cake mix in the cake mix section at grocery.

You can always use the new cake mix that is out. But I do recommend adding a big spoonful of mayonaisse to the batter.(it will give it the right moistness) Make sure to use a buttercream frosting and sprinlke it with broken pecans and coconut. By the way - if you dont have a heart shape pan - a small square cake pan and a round layer pan will work== cut the round one in 1/2 and butt it up on 2 sides of the square layer pan

Just made some red velvet cupcakes yesterday.

2 1/2 cups flower
2 tsp cocoa powder
2 eggs
1 cup oil
1 tsp salt
1 tsp baking soda
1 tsp vinegar
1 cup buttermilk
2 oz red food coloring - Yes, 2 freaking ounces of red food color

We put cream cheese icing on them

My vote would be one made by a recipe from Paula Deen and it was absolutely FAB-U-LOUS! It's my brother-in-law's favorite cake so I have had quite a few different versions, and this one is by far, the yummiest on I've had. It was just chocolately enough, very moist, and the frosting was perfect :) Hope you enjoy it as much as we do!!!
