Chop a medium size yellow onion and smash a clove of garlic. Heat a large cast iron skillet. Put the onion, garlic and ground beef in hot skillet. Let it cook on low heat (this will carmelize the onions and make them sweet) until the meat is cooked. While it is cooking add salt and pepper to taste. You know if you like lots or a little salt. While the meat is cooking get out a pot/pan big enough to boil an appx 1 lb. package of noodles in. Heat the water and cook the noodles. When the meat is cooked, add a can of cream of mushroom soup and half a can of milk to the meat (assuming you like mushrooms and aren't eating Kosher. If you eat kosher, skip this recipe). Add a can of mushrooms. mix and heat through. Drain the noodles (elbow or wide egg noodles are best) and serve the meat and sauce over the noodles. This is a total comfort food. It isn't remotely fancy or very healthy. It is reminiscent of stroganoff but the really poor man's version. Enjoy! we do.
