Key Lime Pie

But This One Works

There are many variations of Key Lime Pie, even in Florida.

But one thing nearly everyone should understand and agree about, the natural color of this pie is a very light yellow ...not green from adding food coloring.

This is a famous restaurant dessert recipe.

No one really knows who developed the first recipe for this delicious pie.

Key Lime Pie
Preparation time: 15 minutes. Serves 6-8.

Ingredients:
Juice from 2 Key limes
2 tablespoons lemon juice
2 egg yolks
1 can Eagle Brand condensed milk
2 cups whipped topping or whipped cream
One 9-inch baked pie crust or graham cracker pie crust or chocolate crust
Grated chocolate or chocolate curls for a garnish

Instructions:
In a mixer or by hand, beat first 4 ingredients together
Fold in the whipping cream
Pour into the crust of your choice, mounding towards the center
Garnish with grated chocolate or chocolate curls and/or very thinly sliced lime sections

Cooking time less than 10 mins
Ingredients
375g/12oz plain or sweetmeal digestive biscuits, crushed
150g/5oz unsalted butter
grated zest and juice of 8 large limes
570ml/1 pint double cream
1 x 397g/14oz can sweetened condensed milk
To Decorate:
crystalized lime zest



Method
1. Melt the butter in a small pan and stir in the crushed biscuits. Lightly press into the base of a 23cm/9in deep loosed-bottomed fluted flan tin. Chill whilst preparing the filling.
2. To prepare the filling: place the lime juice into a large bowl, add the cream and condensed milk. Whisk for 1-2 minutes. Add the lime zest and lightly stir. Pour into the prepared biscuit base. Place onto a tray and chill for 1-2 hours.
3. Decorate with crystalized lime zest and serve.

Tip:
To make the crystalized lime zest: wash and dry 2 whole limes and peel with a swivel vegetable peeler. Using a sharp knife cut the peel into thin matchstick-sized strips. Blanch in boiling water for 1 minute. Drain and refresh in cold water. Place 50g/2oz caster or granulated sugar into a small pan with enough boiling water to cover. Bring to the boil and heat until it reaches the hard crack stage at 180C/350F. Add the lime zest and remove from the heat. Stir well and pour into a metal sieve over a bowl. As the sugar cools separate the lime zest with a fork and allow to cool completely. When cool remove the lime zest from the sieve and rub off the excess hard sugar. Use as required in the key lime pie recipe.

Key Lime Pie:

30 min 10 min prep
6 servings

1 3/4 cups sweetened condensed milk
4 egg yolks
6 tablespoons key lime juice
1 9 inch prepared graham cracker pie crust
sweetened whipped cream or Cool Whip
1 fresh lime, sliced

1. Preheat oven to 250-degrees.
2. Combine milk and egg yolks in a blender on low speed.
3. Slowly add lime juice, mixing until blended.
4. Pour into pie shell and bake 20 minutes.
5. Let cool and refrigerate.
6. Top with whipped cream& lime slices.

This is the winner-and it's really easy too!
You will need...
1 (14 ounce) can sweetened condensed milk
4 egg yolks
2 teaspoons key lime zest (optional)
1/2 cup key lime juice
2 drops food coloring (optional)
1 graham cracker crust

Directions-
Beat egg yolks with food coloring.
Then mix in sweetened condensed milk.
Then mix in key lime juice and zest.
Pour into graham cracker crust and bake at 325 for about 20 minutes (check after about 13 minutes) or center is jiggly when shaken slightly, or when knife inserted in center leaves mark.
Chill in freezer for 10-15 minutes.

Try this its great .....

1 1/2 cups sugar
4 tablespoons all-purpose flour
4 tablespoons cornstarch
1/2 teaspoon salt
2 cups boiling water
4 egg yolks, beaten
1/3 cup fresh lemon juice (use freshly squeezed - you'll be using the rind, too)
2 whole lemons, rind of, grated (rind only of 2 lemons)
1 baked 9-inch baked pie crust

In a bowl, mix the sugar, flour, cornstarch, and salt together.
In a saucepan over high heat, boil 2 cups water; add the sugar mixture and cook, stirring constantly, until mixture just begins to thicken.
Reduce heat to low and cook until thickened; whisk in the beaten egg yolks and cook 2 minutes longer on low heat.
Remove from heat, stir in the lemon juice and rind and combine well; let cool for 5 minutes, then pour into previously-baked pie shell. If you like, you can cover with meringue

ICE CREAM KEY LIME PIE

2 tsp. grated lime peel

1/4 cup lime juice (from frozen concentrate)

2 cups vanilla ice cream, softened

1 Ready Graham Pie Crust

Put all the ingredients in a food processor. Mix then pour into the pie crust. Put in the freezer until set. You can make it one day in advance.

one 14 ounce can of sweetened condensed milk (NOT evaporated)
3 egg yolks
1/2 C key lime juice
Combine blend until smooth pour into premade graham cracker crust and bake at 350 degrees F for 15 minutes. Let stand for 10 minutes then refrigerate. Garnish with whipped cream. ( Some recipes give you the option of not baking. I always bake because of raw eggs and salmonella. Easy recipe never fails. Enjoy!
