I am a beginning cook and I was wondering what spices I should have...
I have oregano and parsley...of course garilic... but other than that I don't know what to buy... Thank you!!!

Salt and pepper of course- use a pepper mill and have freshly ground pepper- onion salt/powder, garlicsalt/powder, basil, oregano, parsley, to name a few. For baking, I would recommend cinnamon, nutmeg (also good for cooking! Adds a little "extra something"), ginger, allspice. I use these the most.

Of course salt & black pepper, paprika (great on chicken), garlic, oregano, parsley, cinnamon, nutmeg, onion powder, SeasonAll, cumin. If you do much italian cooking, you'll need basil and rosemary. For flavorings, you should start with real vanilla and almond. Since you're just beginning to get in the kitchen, you may want to wait until you need a spice for a recipe you want to try before purchasing some, because they can be expensive. They don't keep forever and should be tossed out after a maximum of two years (although some will keep longer than others). Have fun!

Some of it depends on what you want to cook.

If you want to cook a lot of stir-fries, for example, get some cloves, some powdered ginger, and some anise. Cumin is useful for both Mexican and Chinese recipes. And I know it's cheating but my jar of curry powder makes curries quick when I want to use up half-onions and peppers.

On a more common side, I use rosemary, sage, and thyme quite often (especially with chicken). I also use a LOT of cinnamon (you can sneak it into just about everything, but it's important when baking, too.) Obviously have some pepper on hand, too. I like using coarse pepper and kosher salt because it sticks a bit better to meat.

One hint I read was that every time (or few times) you go shopping, buy one new spice. Spices can be kind of expensive, but if you do it one at a time, you end up with a full cabinet by the end of the year.

So, my list:
kosher salt
coarse pepper
chili

rosemary
sage
thyme
cinnamon

and optionally:
curry powder (it covers a multitude of culinary sins)
anise
cloves

Cumin is a nice smoky spice to have, adds no heat just nice flavor. I love to use rosemary on oven fried potatoes & in stews. Happy cooking.

I like to keep basil, cayenne pepper, cloves, cinnamon, nutmeg and dried mustard. I usually just buy spices as I need them for recipes.

Lemon pepper is always great. I put it on everything. Salads, veggies, fish, pretty much everything I put it on. Also I always have some kind of cajun spice or chyenne pepper. One more thing would be a minced onion.

Some of what I keep in cabinet:
garlic powder..not garlic salt..
cinnimon..garlic cloves..bay leaves..paprika..season salt..meat tenderizer..nutmeg..oregano..
Think that may be it..
