I'm not sure what you mean by fresh-- Parmesan cheese is generally aged for a while to get that hardness and flavor. In the deli section you can buy un-grated chunks that you grate yourself---or they'll slice you some off a big roll of it. It is much nicer than the pre-grated kinds in plastic bags (like Kraft etc.) -- and WAY better than the kinds in the little green boxes on the grocery shelf!
You can buy fresh mozzarella at your better publix stores--sold in the deli section as well. This is actually quite fresh (only a few days old, at most) and stored in water.

Probably, it would be near the deli section rather than the cheese and dairy section, with the specialty cheeses.
