Instead of using a more expensive cut of beef, which you slice thin...you could use browned up hamburger to make Beef Stroganolf. Keep everything about the recipe the same just substitute with browned hamburger.

My favorite which is quick and easy is brown your hamburger meat, drain a can of Ranch Style Beans and rinse them. Add them to your hamburgery meat, add a regular size can of tomato sauce and 1 to 1/2 cups of cooked rice.(based on 1 lb. of hamburger meat). Mix together. Serve with a salad. It is delicious!

Betty Crocker makes a variety of boxed dinners to use with hamburger meat. We like the strogonoff mix. Everything is in the box except the meat. You can use turkey instead and it's very good. It's our quick dinner specialty.

Chili is a good and easy thing to make. Meatballs are another. Meatloaf, if you make it right, can be really good.
I like making a Mexican macaroni dish. All it is is beef stock, canned tomatoes, ground beef, frozen corn, macaroni, cilantro and chili powder.
Brown the ground beef in a large saucepan on medium to medium high heat. Mix in about a cup of beef stock and a can of diced tomatoes. Bring to a simmer. Add about 8 oz of macaroni. Stir well. Add a bag of frozen corn, about 1 tablespoon of cilantro and about 1-2 tablespoons of chili powder. Add salt to taste. Stir well. Cover and simmer until the macaroni is soft, stirring occasionally.
It's kind of like Hamburger Helper, but homemade, less salty and much better!

Itailian Chili
2 lbs ground beef(extra lean)
1 small onion, diced
4 cans of minestone soup(concentrate--like Campbells)
4 cans of water
1 cans of Rotel diced
1 can of diced tomatoes
2 cans of Ranch Style Beans
Brown Ground beef --drain
Add everything above (including the juice from the beans) to a large pot and bring to boil. Then bring down to a simmer and cook for 1 hour. It is the best soup/chili in the world!!!
