Blackened Catfish

2 tablespoons paprika
2 1/2 teaspoons salt
2 teaspoons lemon pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground pepper
1 1/2 teaspoons dried basil
1 teaspoon onion powder
1 teaspoon thyme
6 catfish fillets
1 cup unsalted butter, melted

Heat a large cast iron skillet (recommended) or heavy aluminum skillet over high heat for 10 minutes.
In a small bowl stir together first 8 ingredients.
Dip catfish into melted butter and coat both sides of fish with spice mixture, using about 1 T spice mixture for each fillet.
Place fish on waxed paper.
Place 3 fillets at a time in hot skillet.
Drizzle each fillet with 1 T melted butter.
Cook over high heat about 2 minutes per side or until fish flakes easily.
Serve immediately



Classic Fried Catfish

1 cup yellow cornmeal
1/3 cup all-purpose flour
1 1/4 teaspoons ground red pepper
1/2 teaspoon garlic powder
2 1/2 teaspoons salt
12 catfish fillets (about 3 3/4 pounds)
Vegetable oil

Combine first 4 ingredients and 2 teaspoons salt in a large shallow dish. Sprinkle catfish fillets evenly with remaining 1/2 teaspoon salt, and dredge in cornmeal mixture, coating evenly.
Pour vegetable oil to a depth of 2 inches into a Dutch oven; heat to 350°. Fry fillets, in batches, 5 to 6 minutes or until golden; drain on paper towels.
Note: For a quick weeknight version, skip the deep fryer. Cook catfish in 2 tablespoons hot oil, per batch, in a nonstick skillet 5 minutes on each side.

Cajun Catfish:

4 catfish fillets (4 oz. each)
1/2 teaspoon cayenne pepper
1 ounce wheat flakes cereal
1/2 teaspoon black pepper
1 tablespoon paprika
1/2 teaspoon white pepper
1/4 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon onion powder
1 tablespoon oil
1/4 teaspoon garlic powder

1. Wash the fish fillets and pat dry.
2. In a bowl mix the ground wheat flakes and all the seasonings.
3. Pour the dry mixture onto a piece of foil or wax paper, and dip the fillets into the seasoning, coating both sides.
4. In a heavy cast iron fry pan heat the oil.
5. Fry the fillets for 2 minutes on each side.
6. Lay the fillets on a plate lined with a paper towel, cover with another paper towel, and pat to remove excess oil.

Beer battered catfish! Put 1 cup of flour in a bowl, season well with salt, pepper, Cajun seasoning, and cayenne, and whisk in a beer (the lighter and cheaper the better). In a baking pan put about 3 cups of flour and season the same way. Dredge the fillets in the flour, dip into the batter, and drop into the fryer (or hot oil). The batter will be so light and fluffy.

I'm from the South and the only way we cook catfish is to fry it. Look in your grocery isle where the cornbread mix is. They should have a fish fry mix. Follow the instructions - Serve with slaw and hushpuppies
