eww, you don't. you treat your oysters with respect. make up a little cocktail sauce, and just down 'em raw. they're so good.

Broiled oysters
4-6 servings 20 min 15 min prep

oysters
melted butter
Worcestershire sauce
salt
cayenne pepper
paprika
parsley (optional)
lemon slices

Drain oysters or shuck and save deep shell side.
Place drained oysters in a shallow buttered pan.
Or place shucked oysters on shell with some of saved liquor.
Whisk together, melted butter, Worcestshire souce, salt, cayenne (just a few grains),and paprika.
Pour mixture over oysters, either panned or shucked.
If doing on half shell, place them on a cookie sheet.
Place pan or cookie sheet under broiler until the oysters are plump, about 5 minutes, do not overcook.
Serve immediately, with parsley sprinkled over and lemon slices.
Serve panned oysters on hot buttered toast, toast should be crisp, great appy.
Served on half shell makes a great first course for a dinner party, Place 2, even 3 on each shell.

Baked Oysters
4 servings 25 min 5 min prep

4 dozen oysters
5 1/3 ounces butter
2 shallots
2 tablespoons minced parsley
salt
pepper
breadcrumbs

Open the oysters carefully, reserving both shells and liquid.
Strain the liquid into a saucepan and bring to the boil.
Lift the flesh off the oysters with a small fork and poach in the liquid for 1 minute.
Then drain and reserve.
Preheat the oven to a high temperature.
Mince the parsley and shallots very finely and work them into the butter until it is soft and creamy.
Season with salt and pepper to taste.
Put the poached oysters back into their shells, fill them with the shallow butter, sprinkle with breadcrumbs, and bake in the hot oven for 5 minutes.
Serve very hot.

While you don't actually steam them they can be cooked in the microwave. *Nuke* on high for about a minute and then dip them in garlic butter. My brother, who is a chef, does this at home when he is too lazy to make them the "right" way.

in a plastic or microwable pyrex, add just a little bit of light butter (not necessary) but it gives flavor. Add salt, pepper, and lemon juice to the fish, put it in the pyrex, add a little water, tjen cover it with plastic foil, and cook it for about 5-10 min. Or be checking it until it is white, and tender. You can add onion, tomatoes or pepper, to give it more flavor!!! Enjoy!
