Wholly Guacamole
6 avocados (soft, but not mushy)
2-4 cloves garlic, minced (depends on how much you like garlic)
1 lime, cut in half
1 medium tomato, diced
1/2 medium onion, diced
salt
chopped cilantro (optional)
1 diced jalapeno pepper (optional) or serrano pepper (optional)
Cut avacados in half, remove pit, and spoon avocado into a mixing bowl.
Add minced garlic and squeeze the juice from one-half of the lime into the bowl of avacado.
Mash the ingredients together to desired consistency using the back of a large spoon or a potato masher (some like the avocado chunky, some like it smoother).
Fold in diced tomato and diced onion, a couple pinches of salt, and the juice from the remaining lime half (Also add cilantro or peppers at this time).
Cover the bowl and refrigerate for 30-45 minutes.
Uncover and taste.
Add salt as needed.
If you don't give the resulting guacamole at least 4 stars, then you ain't making it right.
NOTE: The purpose of the lime is to allow any leftover guacamole to retain its "avocado" color as it sits in the fridge.
Some folks use lemon, but it's been my experience that if you accidently add too much lemon, it seriously affects the guacamole's flavor; if you happen to add too much lime, the guacamole just gets a little more tangy.
If you find the leftover guacamole has darkened, simply stir it before eating and use more fresh lime juice next time.
Wholly guacamole may be used as a topper with tacos, enchiladas, fajitas, etc.
However, some say it is at its best with a bowl of warm tortilla chips and an ice cold beer.

Well my "recipe" is actually a "to taste" recipe! I just scoop put the avocados and mash them up really well. Add finely diced onion and chopped tomatoes, and then use lemon pepper, salt, and garlic to taste. The tomatoes are optional, and if you don't use real diced onions, then at least add some onion powder. You can also add a little lime juice. Adding a touch of sour cream is also good. My 6 year old daughter loves guacamole, and she usually makes it for us. She puts ingredients in and then keeps tasting it and adding what it stills needs, maybe more salt or garlic or whatever. She doesn't like the "chunky stuff" (onions and tomatoes) so that is why we use onion powder! It just takes trial and error to get it the way you like it.

Guacamole

·4 avocado
·1 medium tomato, seeded and diced
·1/4 cup onion, peeled and diced
·1 serrano chile, seeded and diced
·1/4 cup crema (or sour cream)
·1/8 cup cilantro leaves, coarsely chopped
·2 tablespoons lime juice
·salt and pepper to taste
PREPARATION:
Mash 2 of the avocado with the back of a fork or other mashing utensil. Add in the serrano, onion and cilantro. Fold in crema and lime juice. Add salt and pepper to taste. Dice the remaining avocado into 1/4 - 1/2 inch cubes.
Fold the diced avocado and tomato into the mashed avocado mixture. Serve immediately.

It's great without the serrano pepper too!! Quick & Easy

Guacamole, a dip made from avocados, is originally from Mexico. The name is derived from two Aztec Nahuatl words - ahuacatl (avocado) and molli (sauce). The trick to perfect guacamole is using good, ripe avocados. Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet and will not taste good. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be past ripe and not good. In this case, taste test first before using.

2 ripe avocados
½ red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Garnish with red radishes or jicama. Serve with tortilla chips.

1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)

2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.

Keep the tomatoes separate until ready to serve.

Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.

3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

4 Just before serving, add the chopped tomato to the guacamole and mix.

Serves 2-4.

Variations

For a very quick "guac" just take a 1/4 cup of salsa and mix it in with your mashed avocados.

You don't need to have tomatoes in your guacamole.

To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guac with some cottage cheese added to it is my favorite.

two or more ripe avocados (preferable the Haas variety), diced and tossed with a little lemon juice (to prevent browning)
one sweet white onion, chopped
1/2 cup frozen corn, thawed, or fresh off the cob
1/2 cup cooked black beans
one ripe tomato, seeded & chopped
one jalepeno pepper, seeded & finely chopped (optional)
2 tbsp chopped fresh cilantro (optional)
3 tbsp extra virgin olive oil
extra lemon juice to taste
salt & pepper to taste

mix all of the above gently (to avoid mashing up the avocado too badly) & serve with chips, warmed tortillas or on fresh romaine lettuce leaves. makes an excellent side dish with chicken or fish.

If you wanna kick it up a notch... get three avocados, a little mayo or sour cream, your choice of salsa, fresh cilantro, and chop up some jalapeños and onions. Drizzle a little lime juice, and season with salt and pepper. Enjoy.
