I'm trying to find a real recipe for poutine gravy. I keep seeing references that it is something called Hot Chicken Gravy, and were not talking about chicken gravy thats been warmed.. some dish called hot chicken. I want real poutine like in Quebec, not beef gravy shortcut american fake stuff.

I have a friend of mine from Quebec and when he made it for me he made a chicken gravy and added some tomato sauce to it...not spagetti sauce just tomato sauce.
I don't remember the amount but the chicken gravy had a brown color like beef gravy when he was done.
he poured that over fresh deep fried potato wedges and topped it with cheddar cheese curd.
It was excellent.

: Real Poutine INGREDIENTS (1 quart vegetable oil for frying 1 (10.25 ounce) can beef gravy 5 medium potatoes, cut into fries 2 cups cheese curds DIRECTIONS Heat oil in a deep fryer or deep heavy skillet to 365 degrees F (185 degrees C). While the oil is heating, you can begin to warm your gravy. Place the fries into the hot oil, and cook until light brown, about 5 minutes. Make the fries in batches if necessary to allow them room to move a little in the oil. Remove to a paper towel lined plate to drain. Place the fries on a serving platter, and sprinkle the cheese over them. Ladle gravy over the fries and cheese, and serve immediately. Add cut up cooked chicken or hamburger. Italian Poutine: Substitute marinara for gravy. .

Real Canadian Poutine Recipe
This traditional Canadian dish is DELICIOUS. It is better with cheese curds but you can use regular shredded mozzarella cheese if curds aren't available in your area. For something a little different use spaghetti sauce instead of gravy. Recipe calls for canned gravy but homemade leftover gravy is SO MUCH better.

Heat oil in a deep fryer or deep heavy skillet to 365 degrees F (185 degrees C).

Remove to a paper towel lined plate to drain.
Place the fries on a serving platter, and sprinkle the cheese over them.
Ladle gravy over the fries and cheese, and serve immediately.

Italian Poutine

This is a nice change from regular poutine in that it uses marinara sauce in place of the beef gravy. Not sure if it could ever beat the original, but I like it for a variation once and awhile. Be sure to use real cheese curds or it is just not a poutine. I

Warm spaghetti sauce in saucepan or microwave.
Place the fries into the hot oil, and cook until light brown, about 5 minutes.
Remove to a paper towel lined plate to drain.
Place the fries on a serving platter, and sprinkle the cheese over them.
Ladle spaghetti sauce over the fries and cheese, and serve immediately.
Top with a bit of parmesan cheese.
