Isn't that another name for herbed butter? Each chef and restaurant (aka maison or house) has it's own special blend, using different herbs, so it depends on what flavor you're going for, as to what you will use.

There are some traditional ones that many use regularly, though.

I think when you say maison butter, it's like saying house dressing or house wine; it's whatever that maision or house is serving or is noted for
