Treat it as you would any other caviar from any other fish. NO METAL IMPLEMENTS, please. Use glass dishes and utensils or mother of pearl (traditional caviar material).

Metal changes the taste. Kind of like serving acidic tomato juice drinks or lemonaid in stainless steel cups--it makes it taste "off" or bad.

Put it on toast points (toasted triangles of bread from a small, party style loaf). You can put cream cheese, lightly smeared, on the toast points first.

Keep it chilled in a small glass dish, set atop crushed ice in another, bigger bowl beneath it, on the buffet table. Put out some good quality water biscuits or crackers.

Use it as garnish and/or flavor for cream-cheese based spreads for the crackers, but be carefule handle gently as the eggs will burst open if you stir or mix too roughly.

Use as toppings for stuffed cherry tomatoes or similar hors' deourves.

See here for a quick but good site for tips and care instructions:

PS- I don't agree with caviar snobbery and caviar snobs, ie: only expensive is good, only Russian is good, only sturgeon is ok, only THIS salmon roe is good, etc. If I like it, I eat it. I'm the same with all other food.

Enjoy!

My ex used to like cod roe, but I'm sure we bought it tinned. We just used to slice it, coat in flour and fry. Other fish roe we used to pop under the grill on foil, then spread on toast.

I like soft-boiled cod-egg with toast soldiers. Mind you, it's very tricky to take the top off without a magnifying glass.
