It depends on the airline, but I think the average is on Tuesdays and Thursdays. Avoid weekdays and Monday's and Friday's. Wednesday is usually lower than the other days. But most airlines will offer a special on Tuesdays and Thursdays.
If you sign up for their e-mails, most companies will e-mail you when they will have a special rate.

i go to southwestairlines.com and they have special internet rates that range from 75-150 depending on where your going for one way.
