When I see them use imitation crab meat in a roll, it seems and taste like there might be other ingredients to it, not just the imitation crab itself. Do they add mayonaisse, salt, sugar, etc to it? Or is it really just imitation crab itself?

If it's shredded, then they probably have added mayo.

But, no GOOD sushi place would even touch Imitation Krab. Bleeeeeech.

Mayo is extremely common in sushi, especially with Surimi (imitation crab) and Crab. They use Japanese mayo (Kewpie), of course, which is richer and thicker than usual.

Japanese food is all about simple flavors and the original flavor is the best but you can add to it the flavors that you like for example lime or lemon juice,coriander,chili,fish sauce or oyster sauce.mayonnaise is not recommended but if is something you like then why not.all you can do is experiment and see what results you get and as you go along you will find what best suits your taste.
