If you think about it, there really are only a few side dishes, besides veggies, to eat. Potato's, Pasta, Rice, Hmmmmm, not much else. You can only change the way you design them for a meal. Kind of like on Forest Gump. Bubba had lots of different recipes for shrimp, but really, they all contained the same ingredient. Shrimp! Maybe try cooking some butternut squash. It's a nice change, and reall does taste great baked in the oven. Nice and sweet.

#1. Winter vegetable roast: wash well but don't peel...then chop into bite sized chunks the following winter vegetables. Toss in olive oil and sprinkle with rosemary leaves, pepper and sea salt to taste. Bake at 350 for an hour.
New or red potatoes
a sweet potato
a turnip
winter squash
a parsnip
carrots
an onion
#2. I add frozen vegetables to my rice when I make it: peas or mixed veggies or pepper stirfry. It's something different.
#3. Vegetable frittata: chop the following veggies very fine and mix together.
1 cup each of lettuce, spinach and parsley
1 bunch of scallions
2 leeks
Sprinkle a small packet of chopped walnuts and 3 tablespoons of flour over the mixed veggies. Beat 6 eggs together with pepper and salt to taste. Add the veggies and mix well. Turn into a greased baking pan and bake like a cake at 325 for an hour until a toothpick comes out clean. Sprinkle shredded mozzerella cheese on top. Cut like a cake to serve.

A really easy fix for fish, chicken, or pork is a foil packet. Put your meat and choice of veggies, including cut up potatoes, carrots, zucchini, onions, broccoli, etc, in a foil packet with your choice of spices and a bit of olive oil and lemon juice. You can throw some shredded cheese on top if you like also. Put it in the oven on 350 for about an hour (of course, adjust the time according to the meat type and rather it is boneless or not.) Also, try Kraft.com for some awesome recipes!!

Instead of white rice, try risotto, wild rice, Mexican rice. Pasta gets a kick with some pesto. Make potato salad, scallop potatoes, potato pancakes. Try different starches like polenta, cornmeal muffins,
Instead of a regular tossed salad, make Greek salad, Caesar, corn salsa. Or go the cooked veggie way with a bunch of peppers sauteed with a little garlic, carrots caramelized with a bit of brown sugar.
I find a good way is to go ethnic - flavor your main dish with Italian herbs, Greek flavors, Indian, Mexican, Japanese, etc. They all have very distinctive ways of cooking their sides and it gives a great variety to your meals.

Corn and Green Chilies
Cook: 20-30 minutes
Servings: Serves 4-6
1 lb. frozen whole kernel corn
2 Tbsp. butter
1 medium onion, chopped
1 can chopped green chilies (4 ounce)
1/2 lb. Monterey Jack cheese, shredded
-- salt and pepper to taste
1/2 cup sour cream
Melt the butter in a large sauce pan. Saute the chopped onion and the green chilies until the onion is tender.
Add the frozen corn and cook until heated through.
Stir in the shredded cheese and salt and pepper to taste.
When the cheese is completely melted, remove from heat and stir in the sour cream. Serve hot

Potato Salad
INGREDIENTS
5 pounds red potatoes, diced
4 eggs
4 stalks celery, chopped
1 green bell pepper, chopped
1 (16 ounce) jar sweet pickles, cubed
3/4 tablespoon prepared mustard
3/4 cup mayonnaise
1 onion, finely chopped
1 teaspoon white sugar
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
Place eggs in a medium saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and peel under cold, running water. Chop, and set aside.
Stir the eggs, celery, green bell pepper, sweet pickle cubes, prepared mustard, mayonnaise, onion and white sugar into the potatoes. Season to taste with salt and pepper. Cover, and chill in the refrigerator for at least 3 hours before serving.
This is my favorite "traditional" potato salad recipe. I love all the stuff in it, and the dressing is a bit lower in fat ;)

kasha, lentil pilaf, couscous, stuffed vegetables, winter squash like acorn squash, butternut and spaghetti squash, sweet potatoes, broccoli, artichokes, hummus and babagahouj, eggplant and zucchini sauteed in olive oil with onions and a can of diced tomatoes.
Here's what I do almost every day: I choose a main dish, then I look and see what I have in the fridge and pantry to use up, or I think of what I'm craving. Then I go to Google or Yahoo search and put in the ingredients plus the word "recipe" Then I browse the answers that come up and choose the one that works for me. Give it a try!

try brown rice..it has a distinctive "nutty" flavour..
also try cutting up potatoes and onions....butter some tin foil....yes, butter it....place onions and potatoes onto foil and wrap up...bake in oven or on gas grille.
why not get some sweet potatoes....do them in the oven with some brown sugar, salt & pepper...or do them on the grille like the other potatoes..without the onions..
try the sweet potatoes served with a bit of sour cream..
roast your veggies.....cut them up and toss with a bit of olive oil....cook on a high heat in the oven...turning regularly..(par-boil the potatoes) all your veggies will have a much different flavour..they are particularly more tasty done on a gas grille.
these go with ALL types of meat and fish....don't forget other spices to the potatoes....basil....or mash them with a bit of ranch dressing...mmmm...
for a new salad...try this one...it's really refreshing...and summery:
chop up some WATERMELON...into bite-sized chunks....add in a handful of FRESH basil, chopped faily fine. next, add salt & pepper and a really good olive oil...refreshing and really different...everyone will LOVE it

how about some steamed mixed veggies. & maybe if you have left over white rice you could make fried rice. scramble a couple of eggs set aside. then saute som garlic & onion in a pan & also set aside with the eggs if you like. then get your rice & any veggies you may have (carrots peas ect)& fry the rice then add your egg & sauteed onion & garlic & continue to cook til it is a little toasted (for lack of a better word) after that add som soy sauce to taste. also you can add chicken broth to white rice before cooking that adds a different taste. mexican(red) rice in a pot or frying pan with some oil toast 1 cup of white rice on medium heat til light brown when almost toasted add 1 lg diced clove & a couple of chopped green onions& cook them a little like saute the a couple of minutes add 2 cups of water or chicken broth. if you have no chicken broth, you may add chicken boulion for flavor. 1 or 2 8oz. cans of tomato sauce (depending on how tomatoey you like it ) add some salt & pepper & simmer for about 16 minutes after cooking, let rest for at least 5 minutes before serving.
