Its hard to tell by your name alone, are you female? If you are female, are you close to menstration? Its quite common to put on about that much water weight close to or during menstration.
Personally, I am not a big fan of diets or pills to help lose weight. Most fad diets are great at helping you take off a few pounds fairly rapidly, but you will gain them back when you start eating normally again. Make sure that whatever you do, you are eating a well rounded, nutritionally balanced meal.
To boost metabolism, try eating 4-5 small, nutritional meals a day. If you cut drastically back on your normal food intake, your body may enter "starvation mode" and store fat thinking that there is no food available and that it needs to store fat to survive. By eating small meals more frequently, you will have fewer cravings, be less hungry and have more energy throughout the day by avoiding highs and lows in your blood sugar.
Another way to help boost metabolism and energy is to exercise. You didn't mention if you are getting more physically active, so I thought I'd toss out the idea. If you are exercising or plan to in the near future, remember that building some muscle will also boost metabolism and help you burn calories, even in your sleep.
Some advice I would also offer is that you only weigh yourself once a week or less. Weight fluctuations are normal and weighting yourself too frequently can be discouraging. Real, permanent, change happens slowly.

Same weigh scale?
If yes, that depends on when you weighed yourself first and when you did the next one.
First one would have been in MT stomach. Perhaps when you were hungry. Second one would have been after you ate well.
The weight of the food (!) alone would have been 4 lbs.
Clothes, would be about 2 to 3 Lbs.
It impossible to put on 7 lbs in 2 days. Body just does not work that way.
If all things are on even keel, then your weighing should be approximately the same time every time. Then you get a clearer idea.
You may have gained 1 lb. That too, I said 'may'.

most scales are not accurate to the pound, if a scale says you weigh 220 pounds you can really be anywhere between 118 and 222 or something like that. also, you can gain and lose a lot of weight through the course of the day very easily depending on how much you had to eat or drink that day, the clothes you are wearing, and when you weighed yourself.

Honestly it depends on the diet that you were on. If it was a low carb diet then it is definitely possible. When you cheat on those you gain weight easily and if you go off of it you will more than likely gain all of your weight back fast.

You probably didn't gain 7 lbs in 2 days.
Did you realize that you weigh different amounts at different times of the day??
The best and most accurate way to weigh yourself, is to do it as soon as you get out of bed in the morning. That will be your lowest weight of the day, and the most consistant day to day comparison.
You can't weigh yourself in the morning of one day and the afternoon of the next day and expect any accuracy regarding weight change.

If you cheated with high-sodium foods, you could be retaining water. Wait a couple days and weigh yourself again.
In the future, don't "cheat" for 2 whole days! You can unravel all your progress! Once in a while, cheat on one meal only, then get back on track.

your weight actually fluctuates 3-5 pounds in the run of a day! The acurate time to weigh yourself is first thing in the morning, no clothes on and after you pee.

also you should weigh your self at the same time every day & i was told that it takes 2 days for food to show up as weight maybe try weighing yourself at the same time every day preferbly in the morning when you haven't had anything to eat or drink & you should get a more accurate reading of your weight. good luck

Water weight! Your body is just retaining water. You physically can't gain that much weight in such a short amount in time.
