Ask her what does she do in her spare time. What does she do for fun. When she tells you these things the conversation will go from there. and be really genuinely interested in the things that are important to her. You may find out that she will ask you the same questions and you can tell her what you do in your spare time and you will talk even more. Then build yourself up to asking her if she would like to go out for coffee and see how it goes. If she says no, it just means she is in a relationship or has a boyfriend already, do not take it as a complete no because a woman always have reason. Just say to her, that you've noticied her around and that she seems like a very interesting person and you'd like to get to know her better.
Ask her out for lunch, coffee... keep it small at first.
Then if she agrees, you can ask her all sorts of questions on your date.
I mean, if she's working there, then she may not have the time to strike up a conversation with you.
If you keep asking her a question here and a question there, then you won't get very far. You need the date to break the ice.

I would ask her as many questions as I could about working out at the gym. You could also ask her if she thinks you need more work on any particular muscle group (abs, biceps etc.). She will then need to take a closer look at you. Thank her for her expert advice. Maybe tell her a cute joke.
If you seem to be hitting it off, ask her when her shift ends and whether she would like to get a cup of coffee. Her answer should tell you whether she is interested in you.

See the thing is that guys get the wrong impression of women. They think we want to be questioned constantly, but that makes us feel like we are being scrutenized.
What you need to do is come up with a simple question like "How was your weekend?" and if she comes up with a wimpy reply, then you need to fill in the blanks with how your weekend went.
A coversation consists of two people discussing, not asking a question and delivering an answer. you need to talk as well.

Honestly... you show her your interested just by striking up conversation with her when you see her. Next time you see her ask her how everythings going and if she would like to have lunch with you sometime, be yourself but you gotta have confidence.

What else does she do in her spare time...
Does she like movies...dinners out...music...any particular type of music...what got her started working out...does she have any pets...what kind..what is her favorite quote and why...who does she admire and why...
and the question to ask if you want to know if she's interested..."What would you say if I said I'd like to buy you dinner sometime?"
