we sell this at £3.50 a pop, and people go mad for it.

6oz butter
2 1/2 oz coco powder
3 eggs
12oz sugar
3oz plain flour

melt butter, then add coco powder.
beat eggs and sugar together, then add the butter/coco mix.
stir in the flour.
pour into a square cake tin (10cm x10 ish), lined with silicon paper. cook for 25mins gas 5.

serve warm, with toffee ripple ice cream.

6 ounces semisweet chocolate (any good dark eating chocolate will do)
10 tablespoons unsalted butter, cut into chunks
3 large eggs
2 teaspoons pure vanilla extract
1 1/4 cups all-purpose flour
1 1/2 cups sugar
1/2 teaspoon salt
1 pinch baking powder
1 cup toasted walnut pieces, finely chopped (or any other kind of nut that you like) (optional)

Preheat oven to 350°F.
Toast nuts on a foil lined sheet pan until fragrant, about 7 minutes.
While nuts are toasting break chocolate up into small pieces and place in a medium microwave safe bowl with the butter. Melt Butter with chocolate in the microwave, about 2 mins at 50% power. Stir and continue to microwave at 50% power as required, stirring every 60 seconds. This can also be done over a double boiler.
Let allow chocolate mixture and roasted nuts to cool.
Meanwhile lightly beat eggs and vanilla in a small bowl and prepare a pan, 8 x 8 for thick brownies and 13 x 9 for thin ones. Line pan with foil or parchment and grease. Leave enough lining overhanging to lift the brownies out of the pan when complete.
In a heavy duty plastic bag smash nuts with a rolling pin until well crushed, add remaining dry & optional ingredients - shake to combine.
Slowly pour egg mixture into chocolate while stirring, mixture will thicken slightly.
Add dry ingredients in three batches, stir with a wooden spoon and ensure that each batch is fully incorporated before addting the next. Spread mixture into prepared pan with an angled spatula or a large spoon.
Bake the 13 x 9 pan for 30-35 mins, the 8 x 8 for 45-70 minutes Or until a toothpick inserted in the center of the pan comes out just slightly moist. Cooking time varies all over the place depending on type of pan and your oven. I use natural aluminum pans, have a calibrated thermometer and keep a pizza stone in the oven for consistancy. Whatever you do to insure that that you don't over cook, simply start checking when they start to smell like brownies! You can rotate the pan halfway through the cooking process to even things out if desired.
Cool in the pan on a rack. Remove from pan by lifting foil liner, place on a cutting board and cut into squares.

PREPARATION:
Directions for chocolate brownies
In a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted butter. Add boiling water; stir until well blended. Stir in sugar, beaten eggs and remaining 1/3 cup butter.

Stir in flour and salt. Stir nuts and the chocolate chips into chocolate brownies batter. Pour chocolate brownie batter into a greased 13x9x2-inch baking pan.

Bake at 350° for 35 to 40 minutes or until chocolate brownies are firm and begin to pull away from sides of pan. Cool before cutting into squares.

2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 stick of butter
3/4 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts
1/2 bar (4oz) of your favorite dark choc. and 1/2 bar (4 oz) of your favorite semi-sweet chocolate



Grease a 8x8 inch baking pan and set aside.
Preheat oven to 400 degrees.
In a medium bowl heat proof bowl (like Pyrex), melt the butter and the chocolate over a pot that has bioling water in it
Then stir together the eggs, sugar and vanilla.
Remove from heat (careful, bowl is hot) and stir in flour, baking powder and salt.
Then add the walnuts. (optional)
Spread into the prepared baking pan.
Bake for 20 minutes or until a toothpick inserted in center comes out clean.

~~~~~~~~ Gooey Chocolate Brownie ~~~~~~~~

Makes a 20cm x 20cm x 5cm tray

350g good-quality bittersweet choc, broken up in pieces
250g unsalted butter
¼ cup plain flour
1 tsp baking powder
3 eggs, beaten
1 cup sugar
100g walnut nuts, coarsely chopped

1.Preheat oven to 170 deg C (non-fan assisted).
Lightly butter a baking tray. Line base with baking paper.
2.Melt chocolate and butter in a bowl set over a pot of simmering water. Once melted, remove from heat and set aside to cool slightly.
3.Sift flour and baking powder into a bowl. Set aside.
4.Using an electric mixer, whisk eggs until thick and creamy. Add sugar gradually while whisking, till the mixture is thick and mousse-like.
5.Gently fold in the chocolate mixture in batches, alternating with the flour.
6.Fold in the nuts.
7.Spoon brownie mixture into prepared tray.
8.Bake for 40-45 minutes. The top is crusty, but the centre of the brownie remains moist and gooey.
9.Remove from oven and allow to cool in the tray. Serves
