Cheap, healthy food please - ideas for sandwiches and rolls etc would be good as we are all getting a bit fed up with the usual tuna mayo or cheese and pickle! (I did just post this question but it didn't show up so am trying again).

Very healthy -a Skinny Minnie

A clever and healthy departure from the mainstream. Tuna, houmus and organic vegetables with fresh coriander all served on oragnic wholemeal bread.

Chantelle Ludski of Fresh! Naturally Organic in Wembley created the "Skinnie Minnie" as her entry in the 2006 Sandwich Designer of the Year Awards category "MCM Select Foods Deepblue Tuna Sandwich Designer of the Year."

Congratulations to Chantelle on being a finalist. Here's how she did it and how you can do it too.

Ingredients

* 2 Slices Organic Wholemeal Bread
* 40g Organic Houmus
* 40g MCM Tuna
* 30g Organic fresh grated carrot
* 30g Organic fresh tomato
* 10g Organic baby spinach
* 5g Organic fresh chopped coriander

Method

Spread the houmus on both sides. Add MCM Tuna to one slice and top with grated carrot, chopped coriander, tomato and spinach. Close cut and enjoy!

* Marmite
* mustard
* tomato


Method
Apply margarine/butter to bread, then simply blend in an equal amount of mustard and marmite.Add some very fine slithers of tomato.



This should be different - Black Pudding Club Sandwich

Ingredients

* Black pudding bread
* 4 Soft British lettuce leaves
* 2 Vine Tomatoes, thinly sliced
* 50g Breast of Corn Fed Chicken
* 2 tbsp Zesty Lemon Mayonnaise
* 15g Butter
* 2 free range soft boiled eggs
* Salt & freshly milled black pepper
* 4 rashers naturally cured British streaky bacon, grilled until crisp

Method

Slice the black pudding bread into three thick slices. Line the first slice with lettuce base with Vine Tomato. Thinly slice the chicken and top with mayonnaise. Butter the second slice and place butter side down with mayo top, lettuce, free range soft boiled egg sliced and seasoned, topped with the warm bacon and mayo , topped with the final slice of Black pudding Bread.

Blanche some broccolli(not so it's soggy) and let it cool, add a little creme fraiche,a drop of lemon juice and some flaked tuna.
For a nice snack, cellery with crunchy peanut butter!

Nothing go out and buy a real tasty lunch treat yourself.
If its fat free its taste free.
