Keep to the classic sugar and lemon. Otherwise honey and walnuts... How about ham and cheese (a type that melts)?

For savoury pancakes, I suggest you grate some cheese such as emmental, gruyere or even cheddar. Only put it on thae pancake once you have turned it but do it immediately to allow for the cheese to melt without burning the pancake, add some good qualityroughly diced ham and serve straight away. It is very nice.
I must admit that my all time favourite for sweet pancakes is lemon and sugar but for more taste, try adding some lemon and orange zest in the sweet pastry itself. You could also try a home-made coulis of fresh fruits such as strawberries, raspberries and/or blueberries. Pop the berries in a pan with a little water, sugar (and lemon zest for the raspberries) and cook over medium heat until the berries start to break down. Serve it with some nice thick cream. Not great for your waistline but a real treat!

We have bacon sauce with ours - my grandfather was polish and used to make these all the time - they are so so yummy - the sauce doesnt look yummy but when you taste it your in heaven

you make the pancakes (the really thin kind) but keep a little of the batter and water it down a bit more - put about half a block of lard (must be lard and not cooking oil) in the frying pan and then throw in some chopped up smoked bacon and fry it then pour in the batter and just keep mixing it for a few minutes then enjoy by wrapping the sauce in the pancake

We always say when we are enjoying them - if you can feel your arteries hardening with every bite then you have made them right lolol

Mmmm gently pan fry some onion and chicken breast (small strips) in a drop of olive oil, add mushrooms, peppers, all that jazz. My kids love a bit of tinned sweetcorn too. When done, open up a can of Campbells low fat chicken soup and add to pan. No seasoning needed, the soup does it all. When heated thoroughly (dont bubble, the soup will thin) spoon mixture into the middle of the warm pancakes. Fold each side of the pancake over the mixture to seal it up then sprinkle grated cheese on top. Pop under grill till cheese bubbles. The cheese will help seal the pancake so it doesn't open. Deeeee-lish! Enjoy! x

Savoury -
Bacon and cheese, cheese, basil and tomato, cheese and watercress, cottage cheese with anything!, mushrooms, anchovy and sun blushed tomatoes, tomato and balsamic, any herbs you fancy, anything at all!
Cannelloni can be made with pancakes of course {minced beef and ragu tomato sauce rolled inside a pancake, lay in a dish, cover with cheese sauce and grated Parmesan, cook in the oven till cheese melts} Yummy!
Sweet-
Honey and almond, pecan nuts and maple syrup, walnuts and raisins, cherries - actually a pie filling works best for this - with brandy, or kirsch!, oranges and brandy cream, apple/sultanas and cinnamon, strawberries and chocolate sauce, just grate some chocolate onto the pancake before you fold or roll it!
Get adventurous - you can't really go wrong!

Sweet pancakes: add some small blueberries to the mixture and then fry little pancakes. They taste really good!

Also you can add diced steamed apple or plums, rhubarb.

Add berries and fruits when the mixture is ready, so they would not be crashed.

Sweet or savoury: mix some cinnamon, sugar (optional), self raising flour instead of plain, eggs and full-cream milk and at the end add two or three tsp of full fat cottage cheese.

You can always make crepe Suzette

Make an orange sauce with orange juice, brandy and honey. Place the cooked pancakes in the sauce in a fry pan. Coat both side of the pancake with the sauce then fold the pancake in four leaving it in the pan while you repeat. When the pan is filled with pancakes, about 4, lift them carefully onto a plate and spoon any leftover sauce onto the top. Wonderful.

1.Butterscotch Sauce:
Put 75g/3oz of butter and 3 tablespoons of golden syrup in a pan over a low heat.
As soon as the butter melts, bring to the boil and boil for 3-4 minutes until slightly thickened.
Fold pancakes into quarters and arrange two on each plate.
While still warm, top with a spoonful of whipped cream, then drizzle over the sauce.

2. Traditional filling
Dust with caster sugar, add a squeeze of lemon juice, roll up pancake and serve.
3. Fresh fruit in season and whipped cream.
4. Thin spreading of chocolate spread and slices of bananas.
5. Stewed apples, flavoured with cinnamon and a dollop of fresh cream.
6. Drizzled with maple syrup, golden syrup or honey.
7. Diced chicken with a salsa sauce.
8. Cottage cheese and diced pineapple.
9. Ice cream and fresh berries

1. Savoury Pancakes

Ingredients:

Makes12 pancakes

55g (2oz) Plain Flour
55g (2oz) Wholewheat flour
Pinch of salt
2 Eggs
200ml (8fl oz) Milk
100ml (4fl oz) Water
4 Tablespoons melted butter

Cheesy Filling:

175g (6oz) Gruyere cheese
175g (6oz) Smoked ham

Mushroom Filling:

225g (8oz) Mushrooms
55g (2oz) Butter
Pinch of flour
Pinch of grated nutmeg
Salt and pepper
4 Tablespoons double or soured cream

Methods:

1. Put all the flour and salt in a bowl.
2. Add the eggs and some of the milk and water, whisking them into the flour a bit at a time.
3. Gradually pour the rest of the milk and water into the mixture, whisking until everything is mixed evenly.
4. Add half the melted butter to the mixture and whisk it again to make the finished batter.
5. Pour it into a measuring jug.
6. Brush a frying pan with melted butter and heat until it sizzles.
7. Then pour in 2 tablespoons of pancake batter.
8. Quickly tilt the pan from side to side, so that the base of the frying pan is covered completely with a thin layer of batter.
9. Cook the pancake for about 1 minute, then flip it over and cook it for 10 more seconds. Slide it on to a warm plate.

Cheesy filling methods:

1. Grate the cheese and dice the ham, then mix them together.
2. Sprinkle some of the mixture on to each pancake and fold it over.

Mushroom filling methods:

1. Wipe and finely chop the mushrooms.
2. Melt the butter in a pan and fry the mushrooms for a few minutes until tender.
3. Add the flour and seasoning.
4. Stir for a minute, then add the cream.
5. Spoon a little filling on to each pancake and fold it over.

There used to be a Pancake place in Bristol called Double Dutch that made both savoury and sweet fillings.

My favourite was always the morello cherries with vanilla icecream and chocolate grated on top :o)

Try this...... Cut a banana length ways then 'glue' back together witha little nuttella. Place the banana towards the one end of your freshly cooked pancake and add a generous scoop of pure vanilla pod indulgence ice cream. Roll up the pancake (kinda like a fajita) then swirl a generous helping of maple syrup on top with just a pinch of sugar.......... Delicious! Guaranteed to satisfy the sweetest of teeth!

Fry the fowl form strips till waiting. turn both the sauce and the strips right down to minimum at the same time as you prepare dinner the pancakes. at the same time as each and each and every is cooked fill with a layer of mayonnaise, then different sauce and ultimately some the fowl form strips. Wrap up and keep warmth in the oven when you're cooking a huge batch.
