You do dream everynight, but dreams occur while our brain is relaxed and using Alpha waves, when we wake we switch to Beta waves. That is why the only dreams you remember are the ones you have just before you wake up. Or the dreams you have that cause you to wake up.

Yes, we dream every night. Studies have shown that what seems to us a long long dream it really is ust maybe 45 to 2 hours.
Some psychologists say that if you remember your dreams most of the time you're not sleeping well. Others oppose to this idea.

you do dream every night, but you only actually dream through REM period..which is ..umm if i remember correctly,
the first 90mins of your sleep is light sleep,
you then go one to 40 mins of Heavy sleep
You then have 15 mins of REM this in when you dream.
so you have about 3-4 REM periods in one night.
the reason you dont remember your dreams ( or sometimes you do when you first wake up ) is
well hmmm it would be like the same reason people dont remember every lie they have told.
Because it didnt actually happen, it dissapears ,
you take in so much information every second, millions, without even relising it, your brain sorts through and deletes all the thoughts that it thinks are not needed .
for example, you walk into a brightly lit room filled with people with cold air conditioning and light blue walls, a clock on the wall that says exactly 12.05 , a desk with a paperweight,
Your mind collects all this information every piece of it, then erases so much...its amazing and scary all most,
later some one may ask you " what color tie was he wearing or what color eyes did he have" and you know that you now it but, you actually dont , itsbeen deleted..
its so hard to explain..but i tried..
this universe is so weird..

Dreams, no matter how long they seem in your mind are usually no longer then a few seconds. All of the thought is done in those few seconds but our cognitive mind deciphers it making it seem like a movie being played out. We have hundreds of dreams a night whether you remember them or not. You usually only remember the dreams that you have when you're coming out of REM sleep.

We usually don't dream the earlier dreams that we had in the night. If you get to bed late and aren't finished dreaming yet when you awaken, you'll be more likely to remember b/c it was closer to your waking up time.

Apparently if your dreaming your eyes flicker when your sleeping - because your eyes are moving. Or so I heard.
Though I don't think we dream every night, because if your really knackered and are a heavy sleeper, some people go almost out of consciousness.

i think you do dream every night but for most of us as we get older we dont seem to be able to remember our dreams as much

You may have heard that there are different cycles you go through when you sleep. There are fazes where you do not dream and fazes where you do. I think they are called REM (Rapid Eye Movement) fazes, when you dream. If you wake up during REM sleep you will remember your dream if you wake up during the other, quiet faze, you will not remember.
