How do you dispose of the wastes? (especially when you're Red Ribbon or something)

You mean the crumbs, etc.?
I worked in a bakery one summer .... they saved the sweet crumbs and pieces of cake or cookies and made a nut cake from them ... poured that batter onto a sweet crust, then after it was baked it was glazed with raspberry jam./ it is an old European tradition... I don't recall that there was anything left in the bread and roll section...it pretty well sold out.

in a large chain when something gets close to its shelf life or sell by date it first gets shipped to a discount bakery after it goes past the sell by date it is usually ground down and turned into feed for livestock

in a smaller bakery it is reused in other ways 1 sold at a cheaper rate as day old or it is wrote off as waste

most of the time there is very little waste though demand usually keeps up with the supply
