Agua Fresca Flor de Jamaica (Hibiscus Flower Iced Tea)
2/3 cup dried hibiscus flowers
4 cups cold water, divided
1/3 cup granulated sugar, to taste
Put flowers and 3 cups water in a saucepan and bring to a boil; continue boiling approximately 5 minutes.
Remove from heat and add remaining cup of water and sugar.
Set aside at least 4 hours (or overnight).
Strain into a pitcher and refrigerate.
Serve well-chilled.

You can't make hibiscus tea out of the hibiscus flowers you see in the garden store and on display in the tropics. The type of hibiscus you use is called "sorrel"; it has small flowers. You can buy them in Afro-Caribbean grocers and some health food stores.

Put a handful of sorrel flowers into a large jug and seep in very hot water until it is a very intense red (about 1/2 hour). Add 1/2 cup sugar, then like with "normal" tea, you remove the flowers and discard, then fill the jug with cold water.

You can also buy bottled sorrel "juice", which you mix with water (it is already sweetened).

Another neat thing to do with sorrel flowers is to pack them into a glass jar and cover with thin sugar syrup. Then if you have a glass of champagne or sparkling wine you pop a flower into the glass and it "blooms". Neat summer party drink.

Put hibiscus tea into water and boil it for a few minutes when you sea water s color become red you can stop and serve it .
