try these chocolate chip wheatfree/gluten free cookies ,they are great-
1/4 cup softened margarine
1/2 cup brown sugar
1/2 cup sugar
1 large egg
1/2 teaspoon vanilla
3/4 cup rice flour
3/4 cup soy flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup nestle chocolate chips
By hand blend margarine, sugars, egg, & vanilla until creamy.
In a separate bowl blend flours, baking soda salt. Combine both bowls and mix well. Add chocolate chips and mix. Roll into balls.
Bake at 375° for 12-15 minutes on a lighty greased preheated cookie sheet.

or these, they are gingersnaps with no wheat or gluten.
1 1/2 cups butter
2 cups white sugar, plus some for rolling
1/2 cup molasses
2 eggs
1/2 cup tapioca flour
1 cup potato starch (NOT potato flour)
2 1/2 cups rice flour
1 1/2 teaspoons xanthan gum, plus
1/4 teaspoon xanthan gum
4 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon cloves
In medium bowl, cream butter, sugar, molasses, and eggs.
In large bowl combine dry ingredients;stir into butter mixture.
Refrigerate for several hours.
Preheat oven to 350 degrees.
Scoop out dough, and shape into 1/2 inch balls.
Roll into granulated sugar.
Arrange at least 3 inches apart on a baking sheet. (They spread while baking.).
Bake for 5 to 8 minutes. (Baking less time will give you a chewy cookie; baking more will make them crisp.).
Cool on wire racks.
If desired sprinkle with more granulated sugar.

If your looking for wheat-free due to gluten intollerance, you can make most recipes using this substitute flour mix + 1/2 tsp xantham gum powder (found at most health food stores) (the xanthum gum adds the elasticity that replaces the gluten - i found my cookies generally crumbled without it).
2 parts white rice flour
2/3 part potato starch flour
1/3 part tapioca flour

Here's a Brownie recipe which is great (this one doesn't need the xantum gum because it's more of a caky base)

2/3 cup flour mix (see above)
1/3 cup cocoa powder
1/2 tsp cinnamon
1/4 tsp salt
2 egg whites
1 egg
3/4 cup sugar
6 tbsp applesauce
2 tbsp vegetable oil
2 tsp vanilla

Preheat oven to 350. Grease 8x8 pan.
Mix dry ingredients (first 4) together. Mix wet ingredients together (the rest). Combine. Pour into pan. Bake about 25 minutes.
Optional - add chocolate chips and or nuts

Forgotten Party Cookies

INGREDIENTS
2 egg whites
1/2 teaspoon cream of tartar
1 pinch salt
3/4 cup white sugar
1/2 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Beat egg whites until stiff.
Add cream of tartar and salt. Beat until stiff.
Add sugar and beat until glossy. Add vanilla (or any flavoring) and any coloring, if desired. Add chocolate chips, nuts or raisins if desired.
Drop on greased sheet. Place in preheated oven and turn heat off. Leave for 4-6 hours or over night. Do not double recipe as oven will not hold the cookies.

FLOURLESS PEANUT BUTTER AND CHOCOLATE CHIP COOKIES

1 cup super chunky peanut butter
1 cup (packed) golden brown sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips (about 6 ounces)

Preheat oven to 350°F. Mix first 5 ingredients in medium bowl. Mix in chocolate chips. Using moistened hands, form generous 1 tablespoon dough for each cookie into ball. Arrange on 2 ungreased baking sheets, spacing 2 inches apart.
Bake cookies until puffed, golden on bottom and still soft to touch in center, about 12 minutes. Cool on sheets 5 minutes. Transfer to racks; cool completely.

Makes about 24 cookies

Vegan Wheat-free Chocolate Chip Cookies
1 3/4 cups oat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup brown sugar
1/2 cup sugar
1/3 cup canola oil or melted margarine
1 tablespoon flax seed meal
1/4 cup soy milk
1 teaspoon vanilla
3/4 cup chocolate chips
Preheat oven to 375º.
Sift together oat flour, soda and salt.
In a seperate bowl, combine the flax meal and soymilk.
Add sugar, vanilla and oil and mix until well combined.
Fold wet ingredients into dry.
Fold in chocolate chips.
Drop dough by tablespoons onto an ungreased baking sheet, leaving about 1 1/2 inches between cookies.
Bake 12-15 minutes until golden.
Remove from oven and let cool slightly on the pan, then remove with a spatula and let cool completely on a cooling rack.

Super Nutty Cookies (Wheat Free-Lactose Free)
1 cup almond butter or peanut butter
1 cup packed brown sugar
1 large egg
1 teaspoon baking soda
Preheat oven to 350.
Combine all ingrediant in a medium sized bowl, using a wooden spoon or heavy duty mixer.
After throughly mixed add any additional optional ingrediants-- my favorites: cracked nuts, chocolate chips, or carob chips.
Roll into very small balls and place 2 inches apart on cookie sheet.
9 minutes in the oven or until puffed and golden.
Cookies will be VERY soft until cooled completely.

Almond, Linseed and Coconut Oil Cookies (Wheat Free)
1 2/3 cups almond meal
1/3 cup linseed sunflower seeds and almond mix
1/2 cup icing sugar
1/4 cup wheat germ or oat flour
1/4 cup coconut oil
2 egg whites
1 teaspoon vanilla essence
1 teaspoon almond extract
1/2 teaspoon salt
17 glace cherries (optional)
Heat oven to 170degrees celsius and put some baking paper on a tray or two.
whisk the egg whites until they are very soft peaks.
put all the dry ingredients in a bowl. Pour in coconut oil (make sure it is soft) and the remaining ingredients except for the cherries and mix very well.
Wet your hands and roll the mix into walnut sized balls and place on tray.
Press down with a fork. If it sticks to the fork then fill a cup with water and dip the fork in the water between balls.
Lightly press a cherry into each cookie. You can cut them in half.
Bake for about 20 mins or until the bottom is browning

Take any of your favorite cookie recipes and replace the flour with spelt flour easily found at health food stores. That's what my friend does. She only bakes with spelt flour and it turns out quite good.
