Not something that can be explained in written instructions, and maybe not even learned as an adult. Did you really never learn as a child? Can you ride a two-wheeler? You may have missed the boat! :)

Why not buy those new fangled ones that look like giant close-pins and are joined at the top? Then it's just an open/close motion, avoiding slips twixt plate and lips.
