When they're fresh and a bit green or when they've gone a bit brown?

More easily digested and have the best nutrition when the outside starts to get brown marks. The inside should be still fairly firm though. Leave it too long and the nutrition deteriorates and the inside starts to go mushy.

personally I would say they are a little bit dry and too hard when they are still green or yellow and need to start to turn brown before they really produce a distinctive flavour.

They are the best when they are just starting to turn a little brown.

Depends if you're watching your sugar intake. When they're tinged with green, there's very little taste in them. When fully ripe and mottled with brown spots, that's when they're at their tastiest, but very sugary!

You should eat them before they get to ripe as after that they are very high in sugar
