(a)
Throw diced ham and a can of pinto beans in the crock pot to simmer for a few hours. Season with pepper/pepper mix and/or garlic powder and/or salt substitute. Easy accompaniment that tastes fancy: cornbread - use a mix, but instead of traditional add-ins use a can of cream style corn, a couple of tablespoons of melted margarine, and a liquid (choose about a third of a cup of water or milk); this can be stirred together right in the baking pan.
(b)
Nuke a potato or a sweet potato (roughly 12-14 minutes, depending on size) and dress as you please. NOTE: If you don't want to use cling wrap around the potato, use a plastic bag. "Dress" potato according to desired flavors -- could be heated canned chili, salsa, bacon bits, heated cream of chicken soup, whatever- this is soooo versatile and easy and low on dishes.
(c)
Tuna tacos! Use premade shells you have sitting around (most people don't use 'em up at a meal, so this 'recycles' 'em before they get stale); open and drain a can of tuna (I recommend chunk white in water) and use a fork to put small amounts of it into the shell(s) - then dress as you like. Another taco alternative? Use leftover meat (cooked ground beef, cooked ground turkey, etc) in the shell - then get a 'taste alternative' that's easy by putting in blue cheese dressing.
Best wishes finding new options you enjoy!

Even faster: boil ramen noodles-- it only takes 3 minutes. Microwave some ground Boca veggie burger. Drain the noodles and toss with the "burger" and some marinara sauce. It's a great quickie Italian meal when combined with a bread stick and some tea.
My quickie Mexican meal is two frozen burritos microwaved on a plate with enchilada sauce and cheese on top.
I adore TV dinners and trail mix made from tossed cereals, peanut M & M's, and yogurt covered raisins.
My favorite is this, though, my "French picnic": a loaf of French (or Cuban) bread, a block of cheese, sliced meat (or jerky), fresh fruit (plums, citrus, or peaches are really good), some bakery eclairs (or cream-filled doughnuts), and Welch's Sparkling Wild Berry juice. I love to take that meal to the little lake in our town and eat it while feeding the ducks bits of bread. It's very filling and tasty.
