1/2 cup raisins
1/2 cup brandy or water
1/4 cup butter or margarine, melted
8-10 slices dry bread
1 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
3 eggs
1/4 teaspoon salt
1 teaspoon vanilla
3 cups milk, scald & cooled


Cover raisins with brandy or water.
Set aside.
Melt butter or margarine.
Break up bread, set aside.
Combine brown sugar, cinnamon, allspice.
Reserve 3 tablespoons of this mixture for topping.
Toss bread with remaining sugar mixture.
Pour melted margarine on before you toss the bread crumbs. Your sugar mixture will stick better that way.
Place 1/2 of bread mixture in a lightly greased 1 1/2 quart baking dish.
Drain raisins, place 1/2 raisins over bread crumbs.
Repeat layers.
Combine egg, salt, and vanilla in a bowl.
Beat for 1 minute.
Add milk slowly.
Pour over mix in dish.
Let stand for 5 minutes.
Sprinkle reserved sugar mix on top.
Bake at 325F for 45 to 50 minutes.

not difficult to make either.

1 regular sized of loaf white bread
1 quart milk
1/2 cup melted butter
1 cup white sugar
4 eggs
3 tablespoons vanilla
1/2 cup raisins
1/2 cup brown sugar
Break the bread into small chunks in a large bowl.
Add the white sugar and melted butter and stir.
Add the eggs one at a time alternately with the milk stirring well so that each egg is incorporated before adding the next one until all the eggs and milk are used.
Stir in the vanilla and raisins.
Pour into a greased lasagna pan or a 13x9" inch pan.
(sometimes the 13x9 tends to get over full depending on the particular loaf of bread).
Sprinkle the brown sugar evenly across the top of bread mixture.
Bake in a preheated 350* oven for 1 hour.
Let cool 20 to 30 minutes as pudding will set firmer as it cools.

Bread Pudding
serves 6

Ingredients 1 loaf stale French bread 1 cup raisins 2 cups milk 3 eggs, beaten 1/2 cup melted butter 1 teaspoon vanilla 1/4 teaspoon salt 1 tablespoon cinnamon 1/2 cup brown sugar

Directions

1. Preheat the oven to 350 F
2. Rip the bread into small pieces
3. Place in a mixing bowl and cover with the milk, letting it soak for 20 minutes
4. Mash the bread into a consistent texture with no chunks
5. Add the eggs, vanilla, cinnamon, sugar, raisins, butter and salt and mix well 5. Pour into a buttered nine-inch square baking pan and bake for about 45 minutes, until browned on top and set in center
6. Cut into squares and serve with whipped cream

Do try this typical british stlye bread and butter pudding. It is quite similar to the one which is served in Raffles Hotel in Singapore.

Bread and Butter Pudding (English Style)

For a (22 X 28 cm) casserole or pie dish:

Ingredients:

6 slices of stale or fresh toastbread
40 g butter
2½ cups of fresh milk
3 eggs
¼ cup castor sugar
1 tsp vanilla essence (liquid)
½ cup sultanas

Method:

1. Spread each slice with butter. Trim away crusts and cut each slice into four small triangles. In a casserole or pie dish, arrange the slices of bread so that they overlap each other with sultanas (one or two) in between slices.

2. Pour milk into mixing bowl and then add sugar, vanilla essence and eggs. Whisk mixture until well mixed (note: there is no need to whisk mixture until frothy. Pour half of mixture on slices of bread until well covered and let it soak for 10 minutes.

3. Whisk the balance of mixture again and add in balance of sultanas. Pour over the bread mixture in dish.

4. Place dish in a pan of boiling water. Ensure that the water is about two-thirds the level of dish.

5. Bake in a moderately slow oven (150 - 160ºC) for 50 - 60 minutes or until custard is set. This pudding can be eaten warm or cold. For storage, the pudding must be kept in the fridge.

Bread and Butter Pudding

Ingredients

12 pieces of medium sliced bread
vegan margarine
sultanas
1pint runny custard

The amount that you use will depend on the amount of people you are catering for. For 4 people use 12 pieces of medium sliced bread and 1 pint custard.

Make the custrad with soya milk and sugar/sweetener according to the instructions on the packet but make it slightly runnier by using a little less custard powder (If the recipe calls for 2 tablespoons use one and 3/4).

Grease the inside of a large oven proof dish. Butter the bread with the vegan margarine and slice in half. ut a layer of bread (butter side up) on the edges and the botom of the dish. Sprinkle sultanas on it. Then put a layer of custard. Then put anther layer of bread covered with sultananas and custard. keep layering up until you have used all of the bread and finish with custard. Cook in a 180 degree oven for 30 minutes until golden brown.

Banana Bread Pudding



2 cups milk

2 cups bread crumbs

2 cups mashed bananas

1 cup honey

2 eggs, beaten

2 teaspoons cinnamon

3 tablespoons butter or margarine

1 teaspoon banana flavoring



Instructions: Scald the milk. Remove from heat. Add the bread crumbs. Add each ingredient one by one. Stir well. Please in a greased pan and bake for 1 hour at 325 degrees. Let cool hours before serving.





Notes:



You may also use egg whites only.



Banana flavoring can be substituted with vanilla flavoring.

Caramel Bread Pudding

INGREDIENTS
6 slices day-old bread, cut into 1/2 inch cubes
1 cup hot water
1 cup packed brown sugar
4 eggs, lightly beaten
2 cups warm milk
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon salt

DIRECTIONS
Place bread in a greased 2-qt. baking dish. Combine water and brown sugar; pour over bread. Combine remaining ingredients; pour over bread. Bake at 350 degrees F for 50-60 minutes or until a knife inserted near the center comes out clean. Serve warm or cold.
