Easy Lasagna

1 (16oz) jar spaghetti sauce
8 oz. ricotta cheese
8 oz. mozzarella cheese
4 oz. cooked Italian sausage
6 lasagna noodles

In a rectangle baking dish spread a small amount of spaghetti sauce (enough to cover bottom). Lay 2 lasagna noodles on top. Lasagna noodles do not need to be cooked ahead of time. Spread half of ricotta cheese on top of noodles.
Next sprinkle with half of mozzarella cheese and half of sausage. Lay down two more noodles, cover lightly with sauce and continue as before. After remaining cheese and sausage have be added, lay down the remaining to noodles and cover with remaining spaghetti sauce. Cover lasagna with aluminum foil and bake in preheated oven at 400 degrees for 60 minutes or until noodles are softened.

Remove lasagna from oven and cool a few minutes.
Lasagna Recipe Serves 4.

Tip #1: Lay a sheet of aluminum foil over bottom rack to catch spills.

Tip #2: Top bread with butter, garlic powder, Italian seasonings and mozzarella cheese. Put on cookie sheet and place in warm oven for a few minutes while lasagna cools.

Here's my recipe, and I HATE cooking! You will need:

A lasagna pan (they sell these in the grocery store)
No-Cook Lasagna noodles (no need to boil these first! Rock on!!)
a jar of meat-flavored tomato sauce
1-lb pkg ground beef (or turkey)-brown in saucepan- no need to buy the expensive stuff!
1-lb tub of Ricotta cheese
8 oz pkg mozzerella cheese

Preheat oven 350 degrees. Take your pan and spread a little sauceon the bottom. Now line the bottom with noodles. Then spread a layer of ricotta cheese. Now a layer of meat. Now some sauce. Repeat until you reach the top. Now, on the last two layers, add some shredded mozzerella on top of the sauce. You don't wanna put mozzerella on the whole thing because it will just ooze all over the place and look terrible! Cover with aluminum foil and bake for 1 hour. If you like a crispy top layer, you can remove foil for the last 15-20 minutes. When it's finished cooking, let it sit out for about 20 minutes to "settle". ENJOY!

90 minutes is about right for a lasagna. You should par boil the vegetables and cook the noodles the night before. Lay them straight and lightly cover them in oil to prevent sticking. Make the marinara the night before too. All of this should be enough to get your lasagna done the next day in around 35-45 minutes. Roasting the vegetables the night before would work great as well.

Here's what I do.. Buy the no boil lasagna noodles, they're a great time saver! You will need, meat sauce, mozzarella and parmesean cheese, ricotta cheese and an egg. Layer as follows: on the bottom of your baking dish put a layer of sauce, then the uncooked lasagna noodles, and finally a layer of the ricotta, mozzarella and egg mixture, sprinkle with parmesean and some mozzarella. Repeat until you have the desired amount. Cooking time approx 1 hour. (preheat oven to temp on back of the lasagna box.)

or if you want a little more detailed :) and a bit more tasty

1 lb ground pork or ground sausage
1 lb ground beef
12 ounces canned tomato sauce
1 (28 ounce) can crushed tomatoes
2 tablespoons fresh parsley or dried parsley, chopped
2 garlic cloves, minced
1/2 teaspoon dried oregano
1/2 cup minced onions
1 pinch sugar
2 teaspoons dried basil
1/2 teaspoon salt
1/2 lb small curd cottage cheese
1/2 lb ricotta cheese
3 eggs
1 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 (16 ounce) package dry lasagna noodles
1 lb mozzarella cheese

Preheat oven to 375 degrees F.
Brown pork OR sausage and beef in a dutch oven or similar large, deep skillet.
Once meat is browned, add tomato sauce, crushed tomatoes, 1 tablespoon parsley.
Add garlic, oregano, onion, sugar, basil and salt.
Reduce heat to medium-low and let sauce simmer for 30 minutes.
Give it a good stir every 5 minutes or so.
In a large bowl, combine cottage cheese, ricotta cheese, eggs, Parmesan cheese, 1 tbsp parsley, salt and pepper.
Cover the bottom of a 9x13 inch baking dish with a thin layer of sauce followed by 1 or 2 layers of uncooked lasagna noodles; Assemble the remainder in the following sequence: cheese-egg mixture, sauce, mozzarella cheese (sliced or shredded), noodles; repeat layers ending with a layer of noodles covered with a thin layer of sauce and some shredded mozzerela.
Cover with aluminum foil and bake in preheated oven for 30-40 minutes .
Remove foil, cover top with more mozzerella and grated parmesan.
Bake for another 5-10 minutes .
Remove from oven and let stand for 10 minutes before cutting.
NOTE: When assembling the lasagna, we use medium- thick slices of mozzerella rather than shredded.
Either works great, the sliced cheese just seems to add a little extra"cheesiness.
"We use shredded for the mozzarella topping that is applied at the end
