Cardio you can do just about every day - depending on how intense it is. If you are walking or running for cardio than you could probably do it everyday. But, if you are doing step or kickboxing than you will want to rest a day between since you are using your legs a lot in those type of workouts. Stretching should be done everyday, but if you are weight training than you need to take 1-2 days off inbetween sessions. Allowing your body to rest will help you to be able to increase endurance and intensity because you won't be wearing your body out. Resting is good for the muscles because it will help them to repair in order to grow and strengthen. Also, resting is good for your mind - take time to relax and you could do this by having a day just for yoga.

It depends on what you're doing for cardio. If it's something like running, and you're new to it, definitely rest at least a day between workouts. That lets your body heal from the impact on your bones and muscles in your legs. Other stuff, like swimming, can be done every day. A good way to do it is to do cardio on even days and strength training on odd days, with a rest day every 3 or 4 days.

Five days a week and 2 days off. Hit it hard and enjoy your days off. It hasn't killed me yet.
