It is gelatin, a natural meat by-product, formed when animal parts containing bone, skin or cartilage are boiled. Although canned ham and sausage are pretty mainstream, gelatin as a dish itself is considered a delicacy, known as either consomme (a thick, fortified soup) or aspic (flavored and often put in molds). Gelatin is the main ingredient in the dessert Jello. You can make your own w/ an envelope of powdered gelatin (Knox is a common brand) mixed with hot water to dissolve and the addition of savory flavorings like a bouillon cube or salt and pepper and spices. And some people DO like it better than mayo on a sandwich; some cold cuts are made specifically to include it, headcheese (made of pork) for example.

I am not sure you can buy them in the market. They are industrial type coagulant agents and emulsifiers used only at processing plats. They are mixed with the meat, then heated and cooled suddenly in order to allow the coagulants to form the gel or jello type substances, but it is not a kind of jello. It is special enzymes and other substances that are added for shape, for texture and preservation along with proteins, artifical flavor etc.
So basically what you eat is a bunch of grounded trimmings spiced up and shaped with many chemicals. but if you like them, enjoy them

Simulated adipose tissue is provided by heat coagulation of an aqueous emulsion of lipid material having protein fibres dispersed therein, formed using at least one emulsifying protein isolate, egg white and gelatin in defined proportions as the emulsifying and coagulating agents. The heat coagulated material has good oil release on cooking and in the mouth and may be flavored for any desired end use. A bacon analog utilizing the simulated adipose tissue as the white (fat) phase thereof is described.

so sometimes, it is better to eat food without inquiring much whats in it or otherways you will not eat it.

Unless you are over 40 you probably are not aware what the substance is actually called. It's
Consomme and yes, you can buy beef or chicken. Campbells makes them.
